Choose a speech-to-text API by pricing your real audio workload, measuring latency on your own recordings or live audio, and checking retention for the exact endpoint and mode you plan to use. A provider’s hourly rate, “fast” label, or general privacy statement is not enough to predict your bill, user experience, or data handling.
Start with your workload, not the advertised rate
Build a cost estimate around what the API will actually process. A useful starting formula is:
Expected audio hours × effective per-hour rate × billable channel count + model or feature charges + storage and platform charges.
Then calculate both a typical month and a peak month. Include expected retries and peak concurrency in the operational estimate; their billing treatment varies by provider, but they can affect capacity and total usage.

- Audio duration and billing increments: Check whether billing follows submitted duration, successfully processed duration, or another measure. Google Cloud Speech-to-Text V2 bills successfully processed audio in one-second increments.
- Channels: Determine whether stereo or multichannel recordings are billed per channel. Google says multi-channel billing sums the duration of all channels; AssemblyAI also says multichannel audio is billed per channel.
- Mode: Compare batch, synchronous, and streaming options separately. Google offers dynamic batch for lower-urgency work at a discounted rate; do not assume its price or behavior matches streaming.
- Model and features: Rates may vary by model and API version. Include options such as diarization or other features only if your workload needs them.
- Services around transcription: Storage, network, or other cloud resources can add charges. Google notes that Google Cloud Storage and other Google Cloud resources may incur separate charges.
- Commercial terms and limits: Check volume commitments, annual prepayment, usage limits, concurrency limits, and any minimums alongside the headline rate.
Google’s pricing page identifies channel count, audio length, recognition model, batch method, and API version as pricing factors. Deepgram presents pay-as-you-go and annual Growth plans, model-specific pricing, usage and concurrency limits, and a free-credit offer. AssemblyAI’s live pricing page describes its transcription options and features. These are changing commercial details, so calculate from the current vendor pages rather than an old comparison table: Google Cloud Speech-to-Text pricing, Deepgram pricing, and AssemblyAI pricing.
Define latency before comparing providers
“Latency” can mean several different delays. For a live product, measure at least these separately:

- Emission latency: How long after a word is spoken until a partial transcript containing it appears.
- Time to complete transcript (TTCT), or transcription delay: How long from the end of an utterance until its final text is available.
- End-of-turn finalization latency: How long after a person stops speaking until the system signals that the conversational turn is complete.
- Time to first token or byte: A useful startup measure, but not a substitute for the others. A provider may emit text before speech begins, making this number look impressive without describing the delay users experience.
AssemblyAI’s streaming evaluation guidance explains why early emissions can make time-to-first-token misleading and recommends customer-specific evaluation. There is no neutral, apples-to-apples multi-provider latency statistic established here, so a universal “fastest” ranking would not be a reliable buying criterion.
Run a same-audio bake-off
Evaluate every candidate under conditions that resemble your actual product. Keep the input and configuration consistent, and repeat tests enough to see both typical and tail behavior.

- Choose representative audio. Use the same recorded files or live clips for each provider. Include the accents, languages, noise levels, names, numbers, and vocabulary your product must handle.
- Match the product path. Use the same microphone or recordings, network location, channel configuration, audio chunking, language, punctuation and formatting settings, and endpointing behavior.
- Record distinct timing events. Timestamp spoken words, partial emissions, utterance endings, final transcripts, and end-of-turn signals so emission, completion, and finalization latency are not conflated.
- Measure quality alongside speed. Compare transcript accuracy, word error, and errors on high-value entities such as names, amounts, or commands. Also check whether partial text changes or stabilizes in a way your interface can tolerate.
- Report distributions. Repeat sessions and report median and tail latency, not just the best run. For offline transcription, compare wall-clock completion time with audio duration and assess quality on the same files.
For Google Cloud streaming, recognition uses gRPC. Google recommends 100-millisecond audio frames as a tradeoff between latency and efficiency and notes that larger frames add latency. That is a starting point for testing, not a guarantee of end-to-end response time: Google Cloud Speech-to-Text best practices and streaming recognition documentation.
Verify retention for the exact endpoint and mode
Ask the provider, your product owner, and your security or legal reviewer to verify each item against the selected endpoint, configuration, and contract:

- Is input audio retained? Is the transcript retained? For how long, and for what purpose?
- Does the default permit model improvement or training? Where is opt-out configured: at project level or on every request?
- Can abuse or security logs contain content even when training is disabled?
- Does the endpoint keep output artifacts for retrieval? How do TTL and deletion work, including delays after expiry?
- What metadata remains when audio or transcript content is not retained? Can usage logs be exported or deleted?
- Where is content processed and stored? Does the regional option cover the exact endpoint and feature you will use?
- Are zero-data-retention (ZDR) or modified-retention controls generally available, or subject to eligibility and approval? Which endpoint features are excluded?
Google Cloud Speech-to-Text
Google says it does not use customer content except to provide the service unless a customer participates in data logging. Its documentation says synchronous and streaming requests are processed in memory without storing customer data; asynchronous output transcripts are held for convenient retrieval for approximately five days, while input audio is not stored by the Speech-to-Text service. Processing is global unless a US or EU multi-region endpoint is selected, and Google does not offer single-region processing. Deepgram
Deepgram’s model-improvement participation defaults on. To opt out, set mip_opt_out=true on pre-recorded and streaming STT requests, and ensure the flag is applied to all relevant traffic. Deepgram says audio and transcripts are retained only as long as needed to process the request, while request metadata and usage logs remain retrievable for 90 days. Its documentation describes the resulting opt-out as zero data retention for audio, text, transcripts, and synthesized audio after the response returns. OpenAI API audio endpoints
OpenAI says API data is not used for model training unless a customer opts in. Its API data-controls documentation says abuse-monitoring logs may retain customer content for up to 30 days by default, subject to exceptions such as legal requirements and endpoint-specific application state. Modified Abuse Monitoring and Zero Data Retention require eligibility and prior approval; some endpoint features may still store application state. Check the current endpoint table for /v1/audio/transcriptions and any related calls rather than treating an organization-level setting as proof of zero retention. See OpenAI API data controls.
AssemblyAI
AssemblyAI’s support FAQ states a one-hour minimum TTL for asynchronous final transcription artifacts in its production environment. The FAQ says AWS DynamoDB TTL deletion begins at expiry, but processing can lag from minutes to hours and has sometimes taken a few days. It also distinguishes the model-training environment from the production environment, so clarify training opt-out separately from production artifact TTL. See AssemblyAI’s retention FAQ.

Use the workload and evaluation results to decide what to test or negotiate next. A provider comparison should use the same criteria for every candidate; a favorable rate or privacy statement is meaningful only in its own endpoint, mode, and commercial context.

Before signing, record the model and API version, operating mode, audio hours and channels, rate and add-ons, latency definitions and test conditions, accuracy results, retention and training controls, processing geography, and operational limits. That gives your team a reproducible basis for both procurement and later production checks.
