Horchata is a family of sweet, chilled beverages rather than one standardized drink. Mexican-style horchata is commonly made by soaking and blending rice with water, cinnamon and sugar; Spanish horchata de chufa uses tigernuts instead. Other versions add milk, plant-based milk, almonds or different seeds and spices.
That regional and recipe variation explains why horchata may be dairy-free or contain milk, may include almonds, and may have very different calorie and sugar counts. Traditional rice-and-cinnamon horchata is usually caffeine-free, but a café drink made with horchata syrup and coffee is not.
Horchata is a category, not one fixed recipe
The word horchata describes related traditional beverages whose ingredients change by country and household. The two best-known traditions are distinct:
- Mexican-style horchata: usually a rice-based drink flavored with cinnamon and sweetened with sugar. Some recipes include almonds, milk or another plant-based ingredient.
- Spanish horchata de chufa: a tigernut-based specialty recognized in Spain’s official horchata de chufa regulation. It is not the same base as rice horchata.
Other Latin American versions may use seeds, nuts, spices, milk or plant-based milks. A restaurant’s “horchata,” a refrigerated bottle, a powdered mix and a homemade batch can therefore have different ingredients, allergens, caffeine status and nutrition. Always identify the specific recipe or product before drawing a conclusion.

What is horchata made of?
A representative USDA/MyPlate rice-horchata recipe uses white long-grain rice, water, 1% milk, vanilla extract, ground cinnamon and sugar. Rice is blended with water, allowed to stand, strained, then combined with the remaining ingredients and chilled before serving over ice.
| Horchata style | Typical base | Possible additions | What changes for the drinker |
|---|---|---|---|
| Mexican-style rice horchata | White rice and water | Cinnamon, sugar, vanilla; sometimes milk or almonds | May be dairy-free, but not automatically; almond versions contain a tree nut |
| Spanish horchata de chufa | Tigernuts | Water and sweetener, with recipe-specific flavorings | Different ingredient base from rice horchata; check the product label for added ingredients |
| Milk-based horchata | Rice, tigernuts or another base plus dairy milk | Sugar, cinnamon and flavorings | Contains milk and is not suitable for a milk-free diet |
| Plant-based horchata | Rice, tigernuts or seeds plus a plant milk or water | Almond, oat, soy or other plant ingredients, depending on recipe | Allergen status depends on the specific plant ingredient and cross-contact controls |
| Café horchata beverage | Horchata syrup or concentrate in a prepared drink | Coffee, espresso, tea, dairy or toppings | May contain caffeine and additional milk, sugar or allergens |
Why cinnamon and sugar appear so often
Cinnamon is a common flavoring in Mexican-style horchata, while sugar supplies the characteristic sweetness. Neither ingredient has a fixed amount across recipes. A lightly sweetened homemade batch and a heavily sweetened restaurant or packaged drink can taste and measure very differently.
How traditional rice horchata is prepared
The following sequence follows the USDA/MyPlate example. It is a method, not a universal formula: changing the rice, milk or sugar changes the finished drink.
- Blend the rice and water. Combine white long-grain rice with water and blend so the rice is broken down and dispersed.
- Let the mixture stand. Rest the blended mixture so the rice can soften and release flavor and starch into the liquid.
- Strain. Pour the mixture through a fine strainer to separate the liquid from the rice solids. The straining step determines how much sediment remains.
- Add the remaining ingredients. Stir in 1% milk, vanilla extract, ground cinnamon and sugar, following the chosen recipe’s quantities.
- Chill and serve. Refrigerate until cold and pour over ice.
Recipes that omit dairy can use water alone or a plant-based milk. Recipes that add almonds need a separate allergen check, and a tigernut recipe is a different style rather than a rice-horchata variation.
Equipment and format differences
A blender, fine-mesh strainer and pitcher are the basic tools for the rice method. A coarse strainer leaves more rice sediment, while an overly tight filter can slow the process; either choice changes texture rather than the drink’s identity. Powdered horchata mixes skip the soaking and blending steps and are mixed according to the package directions. Ready-to-drink refrigerated or shelf-stable products may be formulated at a different concentration from a homemade batch, so their labels are the relevant authority.

Common preparation pitfalls
- Assuming every white drink is the same: rice, tigernut, seed and nut bases have different implications.
- Skipping the strain: this leaves a thicker, grainier beverage than the smooth style many people expect.
- Assuming “plant-based” means allergen-free: almond and soy milks are plant-based but are still major allergens.
- Comparing labels without checking volume: per-100-gram, 250-milliliter and 16-fluid-ounce figures describe different amounts.
- Relying on a flavor name: café horchata drinks can contain coffee, tea, dairy or toppings that are absent from plain horchata.
Does horchata have caffeine?
Traditional rice-and-cinnamon horchata is usually caffeine-free. Its conventional base is rice, water, cinnamon and sweetener rather than coffee, tea or another naturally caffeinated ingredient. A USDA FoodData Central-linked restaurant nutrition record lists caffeine as absent or not reported for horchata.
The qualification matters when horchata is used as a flavor in a coffeehouse drink. Starbucks’ horchata frappuccino listing includes coffee, so that beverage should not be treated as ordinary caffeine-free horchata. A bottled drink, concentrate or powdered mix may also include coffee, cocoa, tea or a caffeinated flavoring.

How to check a café or packaged drink
- Ask whether the drink contains espresso, brewed coffee, cold brew or tea.
- Read the ingredient list for coffee, tea, cocoa or named caffeine ingredients.
- Do not infer caffeine status from the word “horchata” alone.
Is horchata dairy-free?
Horchata can be dairy-free, but it is not automatically dairy-free. The USDA example includes 1% milk, while other recipes use water alone or a plant-based milk. A restaurant may also add dairy during preparation or use a shared dispenser.
For a milk-free order, ask whether dairy milk, cream, condensed milk, powdered milk or a milk-containing topping is used. For packaged products in the United States, check the ingredient list and the required allergen statement rather than relying only on front-of-package wording.
Does horchata contain almonds or other allergens?
Some Mexican-style recipes include almonds. Almonds appear in the UC San Diego agua de horchata ingredient listing, so a drink described simply as Mexican horchata cannot be assumed to be nut-free. Other recipes may use a different tree nut or a plant milk made from a major allergen.

The U.S. Food and Drug Administration identifies nine major food allergens: milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame. Packaged foods must identify the food source of a major allergen used as an ingredient. Read the complete ingredient list and any “may contain” or shared-equipment statement because an allergen can also enter through cross-contact.
Questions to ask at a restaurant
- Is the base rice, tigernut, almond or another seed or nut?
- Does the recipe contain dairy milk, condensed milk or a plant milk?
- Is the drink made in a shared blender, dispenser or pitcher?
- Can staff verify the current recipe rather than relying on the drink’s name?
No restaurant or packaged horchata should be called allergen-free without confirmation of its current formulation and preparation controls.
How many calories and how much sugar are in horchata?
There is no single nutrition profile. Sweetener quantity, milk or nut additions, serving size, filtration, and whether the drink is homemade, restaurant-served or commercially packaged all affect the result. The following are documented examples, not universal values.
| Product or serving | Calories | Carbohydrate | Sugars | Fat | Protein |
|---|---|---|---|---|---|
| USDA FoodData Central-linked restaurant horchata record, values per 100 g; accessed 2026 | 54 kcal | 11.52 g | Not stated | 0.71 g | 0.48 g |
| UC San Diego Housing Dining Hospitality Services horchata, 16 fl oz; accessed 2026 | 125 kcal | 28 g | 17.1 g | 1.9 g | 2 g |
| USDA FoodData Central record for Tropi Fresh horchata rice-milk drink, 250 mL serving; 2021 record update | 180 kcal | Not stated | 25 g | Not stated | Not stated |
These entries are not directly interchangeable: 100 g, 16 fluid ounces and 250 mL are different serving amounts, and the products use different formulations. When comparing labels, match the serving size first, then compare total carbohydrate and the added-sugar line where one is provided.
Is horchata healthy?
“Healthy” is not a single yes-or-no property for this drink. Horchata can fit a balanced diet, but its nutritional impact depends largely on the recipe and portion. A lightly sweetened, water-based homemade version will not have the same sugar or calorie load as a large café drink made with sweetened syrup, milk and toppings.

What to evaluate
- Added sugar: Sweeteners can account for a substantial share of calories and carbohydrate. Compare the added-sugar declaration or the recipe’s sugar amount.
- Serving size: A per-100-gram number cannot be compared directly with a 16-fluid-ounce cup without adjusting for the amount consumed.
- Milk and nuts: These alter allergen status and can change fat and protein values.
- Format: Homemade, restaurant, refrigerated, shelf-stable and powdered products may use different sweeteners and concentrations.
Nutrition claims should therefore be attached to the exact product or recipe, not to horchata as a universal category.
How to choose horchata when ordering or shopping
- Identify the base. Look for rice, tigernut, seed, almond or a blend.
- Check dairy. Confirm whether milk is included and whether a plant-based substitute is actually used.
- Check allergens. Look for almonds and other tree nuts, milk, sesame, soy and any cross-contact warning relevant to your needs.
- Check caffeine. Ask about coffee or tea in café preparations and read packaged ingredient lists.
- Check sweetness. Compare added sugar and total sugars, not just calories.
- Normalize the serving. Compare equal volumes before deciding which option is lighter.
- Note the format. A powder or concentrate may be mixed at a different strength from a ready-to-drink product.
A practical comparison example
Suppose one label lists 125 calories and 17.1 grams of sugars for 16 fluid ounces, while another lists 180 calories and 25 grams of sugar for 250 milliliters. Those figures cannot be ranked fairly by looking only at the calorie number: the serving volumes differ, and the recipes may use different amounts of milk, rice solids or sweetener. Compare equal volumes when possible, and use the ingredient list to explain why the numbers differ.

Horchata means different things in different places. Mexican rice horchata is usually caffeine-free and may be dairy-free, but milk and almonds are common enough in some recipes that they must be checked. Spanish horchata de chufa uses tigernuts instead of rice. Calories and sugar vary widely, so the reliable answer comes from the exact ingredient list, preparation method and serving-size nutrition panel.

What should I compare when buying horchata mix?
Compare the base ingredients, dairy, tree-nut and other allergen statements, added sugar, serving size, caffeine ingredients and whether the product is powdered, concentrated or ready to drink.
What equipment is useful for homemade rice horchata?
The basic method uses a blender, a fine-mesh strainer and a pitcher, followed by chilling and serving over ice.
The Bottom Line
Horchata is a varied category: Mexican rice horchata and Spanish tigernut horchata are different drinks. Check the exact ingredients for caffeine, dairy and allergens, and compare nutrition by equal serving sizes because sugar and calories can vary substantially.
