The Witch’s Bakery has 15 recipes to unlock. Baguette, Croissant, and Pain au Chocolat (or Chocolatine) are available at the start. Story progress adds Braided Brioche, Chocolate Fondant, and Macaron; Hassan sells six recipe books; and three recipes depend on conversations or quests. The easily missed triggers are Mrs. Tessier for Chausson Aux Pommes, Best outside his Rue des Barres Atelier for Palmier, and Orin’s wedding-cake delivery for Fraisier.
Unlocking a recipe is not the same as preparing it or reaching its maximum level. Each new entry appears in the notebook at Level 1 of 3, with its baking time and sale price. Use the checklist below, then verify every entry in the notebook.

This table shows the acquisition route, timing, and any follow-up that matters. “Starting” means the recipe is present without a purchase or story trigger.

Starting recipes and the Pain au Chocolat name
The first three entries require no exploration: Baguette, Croissant, and Pain au Chocolat/Chocolatine are the opening recipes. The third recipe is mechanically the same unlock regardless of terminology, but the notebook label reflects an early conversation choice. Choose the wording you prefer when that dialogue appears; changing the term does not create a second recipe or add another checklist slot.

Because these recipes are present immediately, they are useful for checking that you understand the notebook categories and the difference between an unlocked entry and a recipe you have actually baked. A recipe can be listed before you have completed any preparation or leveling objective.
Story-gated recipes
Braided Brioche
Around the 4/10 story point, an Atelier practice request introduces Braided Brioche. The event does not make it instantly purchasable: the recipe becomes available to buy on the following day. If the entry is missing on the event day, sleep or otherwise advance to the next day, then check the relevant purchase location and the notebook.
Chocolate Fondant
Chocolate Fondant is tied to Estelle’s story chapter. You bake it with Estelle, and the recipe reaches the bakery when the Pastries category opens. The category itself remains locked until Estelle’s Palace is complete, so a player can encounter pastry-related story content before the full pastry list is available.

Macaron
Macaron arrives in Chapter 5. It is not one of the recipes obtained through Hassan’s books, and buying earlier books cannot substitute for reaching that chapter.
Finding and using Hassan’s recipe books
Hassan operates a bouquiniste stall along the Seine. His recipe books are separate from lore and fiction books, so read the title carefully before spending money. Most of the listed book recipes are added to the recipe list as soon as the correct book is purchased. Canele and Mille-Feuille are the exceptions: both require you to purchase the book and then open it and read it.
Hassan expands his stock over time. An empty or incomplete selection is therefore usually a timing issue rather than proof that a recipe is unavailable. Make the Seine stall part of every regular exploration loop, especially after a story chapter or a new day. The books relevant to the recipe checklist are:

If a purchased book does not appear to have worked, leave the shop interface, open the notebook, and check the Pastry, Bread, or Viennoiserie section. For Canele and Mille-Feuille, confirm that you selected the book and reached its reading screen rather than merely completing the purchase.
The three character and quest triggers
Chausson Aux Pommes: keep visiting Mrs. Tessier
Chausson Aux Pommes is triggered by a conversation with Mrs. Tessier while you are progressing Estelle’s Palace. The important condition is continued visitation: stopping visits early can leave the conversation—and therefore the recipe—unseen. Whenever Estelle’s Palace advances, return to Mrs. Tessier and exhaust the available conversation before moving on.
Palmier: wait for Best to appear
Rue des Barres is not enough by itself. Best is absent when the area first opens, so the route requires a later return. Revisit Rue des Barres on subsequent days until Best is standing outside his Atelier, then speak to him. If you only checked the street once at its initial opening, Palmier can remain locked even though you have reached the correct district.

Fraisier: finish Orin’s delivery
Fraisier is attached to Orin’s wedding-cake request. Complete the request by delivering the wedding cake. Baking the cake without handing it over does not satisfy the unlock condition, so check the quest state and make the delivery the decisive final step.
How to verify an unlock
After a successful trigger, open the notebook and look under Bread, Viennoiserie, Pastry, or Cake. A newly unlocked recipe starts at Level 1 of 3 and displays both baking time and sale price. The notebook is the authoritative completion check; seeing a character conversation, buying an item, or finishing a practice interaction is not enough unless the recipe entry appears.
Some triggers resolve during the day. A recipe that unlocks during daytime can be practiced in the Atelier that same evening, allowing you to test the recipe without waiting for the next morning. Practice availability is a convenience after unlocking, not a separate requirement for adding the recipe to the notebook.

Unlocking, preparing, and leveling are separate goals
The game tracks three different completion tasks. Unlocking means satisfying the story, book, conversation, or quest condition so the recipe enters the notebook. Preparing is a separate achievement check for making the recipes. Leveling means increasing recipes to their maximum level; recipe entries show a three-level scale, so an unlock begins at Level 1 rather than counting as maximum mastery.
This distinction explains why a player can have all 15 names in the notebook but still lack preparation or mastery achievements. The “Gastronomicon” achievement is worded “Unlock all recipes. Bon appétit!” and concerns the unlock checklist, not automatic Level 3 completion. Plan a second pass through the bakery if your objective is complete preparation or maximum levels.
A practical route for a full completion run
- Confirm the opening trio. Check Baguette, Croissant, and Pain au Chocolat/Chocolatine in the notebook and note which name your dialogue choice produced.
- Advance the early story. Watch for the Atelier request around 4/10, then return the next day to obtain Braided Brioche.
- Use every Estelle’s Palace visit productively. Continue checking Mrs. Tessier for the Chausson Aux Pommes conversation, and progress the palace story until the Pastries category opens.
- Revisit Hassan’s Seine stall. Buy each recipe book as it enters his stock. Read “Jewels of Bordeaux” and “A Thousand Layers” immediately after purchase.
- Recheck Rue des Barres. Return after the district first opens and speak to Best when he appears outside the Atelier for Palmier.
- Complete Orin’s request. Deliver the wedding cake, then verify Fraisier in the notebook.
- Finish the story gates. Confirm Chocolate Fondant after the Pastries unlock and reach Chapter 5 for Macaron.
- Audit the notebook. Count all 15 entries, then decide whether your next objective is preparing each recipe or raising every entry to Level 3.
Troubleshooting a missing recipe
- Missing Braided Brioche: check whether the 4/10 Atelier event occurred and advance to the following day, when it becomes purchasable.
- Missing a Hassan recipe: revisit the Seine stall later; his stock expands over time. For Canele or Mille-Feuille, verify that the book was read after purchase.
- Missing Chausson Aux Pommes: resume visits to Mrs. Tessier during Estelle’s Palace progression rather than assuming the first conversation was sufficient.
- Missing Palmier: return to Rue des Barres on later days. Best does not stand outside the Atelier at the area’s initial opening.
- Missing Fraisier: check that Orin’s wedding cake was delivered, not merely baked.
- Missing a pastry: remember that the Pastry category is locked until Estelle’s Palace is complete, while Macaron waits for Chapter 5.
- Trigger happened but the list looks unchanged: close the conversation or shop interface, open the notebook, and inspect every category rather than only the currently selected tab.
Completion context and a recipe-card example
AllThingsHow’s October 19, 2026 update reported fewer than 1% of Steam players with the Gastronomicon achievement. That percentage is a time-sensitive snapshot, not a permanent measure of the game’s completion rate, but it illustrates how often players miss a character trigger, a delayed book stock update, or the read-after-purchase requirement.
