Refrigerate fresh-ground or homemade nut butter in a clean, tightly sealed container, and follow any storage instructions from the maker or retailer. Keep the refrigerator at or below 40°F (4°C). Natural nut butter may separate; that layer of oil is normal and can be stirred back in.

Put it in the refrigerator after making or buying it. UConn Extension advises refrigerating homemade nut and seed butters because they contain minimal ingredients. Chilling can help preserve quality, particularly in natural butters with fewer additives. UConn Extension’s nut and seed butter guide provides general storage guidance, not a guaranteed lifespan for every freshly ground product.
Commercially packaged butter
Follow the package label and the maker’s or retailer’s directions. Products differ in ingredients, packaging and handling, so general guidance for peanut butter should not override product-specific instructions.
How to store it properly
- Seal the container. Close the original container securely if it seals well; transferring the butter is unnecessary. If you need another container, use one that is clean and closes tightly.
- Keep it cold. Store it in a refrigerator maintained at or below 40°F (4°C). The FDA states, “Keep your appliances at the proper temperatures. Keep the refrigerator temperature at or below 40° F (4° C).” FDA food-storage guidance gives this temperature for refrigerators generally.
- Use clean utensils. Avoid introducing crumbs or other food into the container, then reseal it promptly. FDA recommends covered, properly stored food as part of safe food handling.
How long does fresh-ground nut butter last?
There is no single established shelf life for all fresh-ground nut butters. The recipe, previous handling, packaging and storage conditions vary, and the available general guidance does not validate one duration for every nut type or retail grinding setup. Use the maker’s or seller’s date and storage directions when provided.

The two ranges refer to different products and storage contexts, so they should not be treated as a direct comparison or combined into a fresh-ground best-before date.
Oil separation and other changes
In natural peanut butter, oil can rise to the surface. Colorado State University Extension describes this as normal and recommends stirring the oil back in. Oil separation by itself is not mold or proof of spoilage. If you see mold or the product otherwise seems suspicious, discard it. Do not use smell or appearance alone to decide that food is safe: the FDA cautions that food can contain harmful pathogens without looking or smelling spoiled. FDA food-storage guidance.
