To keep enchiladas from turning mushy, prepare corn tortillas before filling, use enough sauce to coat without leaving the rolls in a pool, and bake only as long as your recipe requires. The aim is tender tortillas that hold together—not crisp tortillas after they have been sauced.
Prepare the tortillas before filling
Corn tortillas are more likely to split or disintegrate when they meet sauce without preparation. Briefly frying them is a classic approach: the light coating of oil helps them absorb some sauce while holding together. Frying also adds browning and flavor, but it does not make tortillas waterproof. Bon Appétit’s guidance on frying tortillas explains the balance.
Quick-fry them
Warm oil in a skillet and briefly fry each corn tortilla until pliable, rather than trying to make it crisp. Let excess oil drain before filling and rolling. This adds a step and uses oil, but is the best-supported option here when tortilla integrity is the priority.
Warm them without frying
For a lower-effort route, warm a stack of corn tortillas, covered, in the microwave until pliable, as in America’s Test Kitchen’s Weeknight Chicken Enchiladas. This makes them easier to roll, though it is not the same as frying to help them withstand sauce. Another option is to brush tortillas with oil and warm them in a hot oven before filling, as demonstrated by PBS’s America’s Test Kitchen segment.

Use enough sauce to coat, not drown
Spread sauce in the baking dish and over the rolled enchiladas so the tortillas are coated and exposed areas do not dry out. Avoid leaving the rolls sitting in a deep pool of liquid. If your recipe makes more sauce than the enchiladas need in the dish, reserve some to serve at the table; the ATK recipe follows that approach.
Keep moisture from the filling in check, too. Drain wet ingredients and avoid overfilling the tortillas. There is no universal sauce volume or moisture limit: recipes and fillings differ, so use the amount and assembly instructions for the dish you are making.

Follow the recipe’s baking time
There is no single oven time for all enchiladas. The timing depends on the filling, whether the sauce is hot when added, and how the recipe assembles the dish. Bake only until the filling is hot and the topping is melted or browned as intended; extending the bake can make tortillas dry or mushy.

These are instructions for two different recipes, not interchangeable times. Use the timing for your recipe rather than combining the methods or extending a short bake by default.

Serve while the enchiladas still hold their shape
Sauced tortillas are meant to soften. For a better chance of intact rolls, avoid letting them sit in excess liquid and serve promptly after baking. The goal is a tender tortilla that stays together, not a crisp one.
