Most assembled enchiladas bake at 350°F for about 15–20 minutes. Follow your recipe’s covered or uncovered method, and check that the center is hot through. For casserole-style enchiladas, use a food thermometer to confirm the center reaches 165°F (73.9°C).
Typical oven time for enchiladas
At 350°F, a 15–20 minute bake is a useful starting point for assembled enchiladas made with cooked or prepared fillings. Recipe examples differ slightly, so use the recipe’s time and doneness directions as a guide rather than treating the timer as a guarantee.

How to tell when the center is safely hot
For enchiladas baked as a casserole or other combination dish, USDA FSIS says the dish must reach 165°F, measured with a food thermometer. Its current temperature chart lists that target as 165°F (73.9°C) for casseroles and leftovers. Insert the thermometer into the center of the dish; if the pan is large or heating seems uneven, check more than one spot.
Do not rely on browned cheese, bubbling sauce, or appearance alone. A casserole can brown before its center heats through. The 165°F target applies to the assembled dish; it does not replace safe cooking of raw meat or poultry before assembly. If a recipe calls for raw ingredients, follow its specific safe cooking directions rather than assuming a standard enchilada bake time will be enough.

What can change the baking time?
- Covering: Some recipes keep the pan covered throughout; others uncover it near the end to melt or brown cheese. Follow the method in your recipe.
- Pan size and depth: A deeper or more tightly packed dish may take longer to heat through than a shallow pan.
- Starting temperature: A pan assembled from room-temperature ingredients heats differently from one taken directly from the refrigerator.
- Oven behavior: Actual oven temperature can vary, so use the stated time as an estimate and verify doneness.
- Filling: The cited example times are for cooked or prepared fillings. They should not be applied to raw meat without recipe-specific safe cooking instructions.
Adjusting for refrigerated or frozen enchiladas
A refrigerated assembled pan needs extra time compared with one that starts warmer. Bake until the center is thoroughly hot and reaches 165°F; there is no reliable fixed number of additional minutes for every pan. Frozen leftovers can be reheated without thawing, but take longer, so check the temperature rather than guessing. USDA FSIS also advises refrigerating perishable leftovers within two hours.
