Use the mixing method your recipe specifies: a mixer is convenient when a recipe calls for sustained creaming and aeration, while hand mixing offers control for gentle incorporation. For muffin-method quick breads, mix lightly and stop when the dry ingredients are moistened. Neither tool is automatically better for every batter.
How to choose between hand mixing and a mixer
Choose based on the recipe’s method and the task at hand—not on a blanket rule that one tool makes better baked goods. The main trade-offs are effort, aeration, control after flour is added, and whether the recipe specifies a particular technique.
- Effort: A mixer makes sustained mixing easier; hand mixing requires more work.
- Aeration: Creaming butter and sugar incorporates air. A mixer is convenient for maintaining that effort, though hand creaming is possible.
- Control: Hand stirring makes it easy to use a gentle touch. A mixer can also be used after flour is added, but follow the recipe’s speed and stop at its stated endpoint.
- Recipe method: Quick breads may use either the muffin method or the creaming method, and those methods call for different mixing approaches.
For cake batter, use a mixer when the recipe needs creaming
If a cake recipe begins by creaming butter and sugar, an electric mixer can make that sustained mixing easier. Hand creaming is also possible, but takes effort. The purpose is to incorporate air, not simply to combine the ingredients.
After adding flour, mix gently
Once flour is in the bowl, avoid prolonged or vigorous mixing. King Arthur Baking recommends a light touch by hand or the electric mixer’s lowest setting. The aim is a tender cake crumb; as author Odette Williams puts it, “Unlike bread, where you want to work the gluten to give it structure … with cake you want a really tender crumb.” This is a reason to avoid over-agitating cake batter, not a claim that gluten development can be eliminated entirely.

For muffin-method quick breads, mix by hand and stop early
The muffin method calls for gently combining wet and dry ingredients. Quaker Oats recommends a spoon and 15 to 20 light strokes, stopping once the dry ingredients are moistened. Small lumps may remain; the batter is not meant to be smooth. Mixing until smooth can overwork it and produce a tough quick bread.
An electric mixer is generally unnecessary for this stage and can make it easier to mix too much. Follow the recipe if it specifies another method: some quick-bread recipes use creaming, which can be done by hand or with an electric mixer.

For brownies, follow the recipe rather than a tool rule
There is no established universal advantage to hand mixing or using a mixer across brownie recipes. Use the tool and mixing instructions the recipe gives; do not assume that a mixer always improves brownies or that hand mixing always prevents overmixing.
