Yes, but only in a laboratory. A broad chemical profile can estimate the declared age of an Amontillado or another vintage sherry more reliably than tasting or checking one “age marker.” A 2005 study by University of Cádiz researchers used statistical models on 30 sherries dated from 1932 to 1999. Its best model had a mean deviation of 1.6 years from the declared ages. That is an average for the study set, not a guarantee for every bottle and not a do-it-yourself test.
What chemical age analysis can—and cannot—tell you
For a bottle labelled with a vintage or age claim, chemical analysis addresses a narrow question: does the wine’s measured composition fit wines of that declared age? It does not read a date directly from the liquid, identify who owned the bottle, or prove that the contents have never been replaced. The result is an estimate calibrated against wines whose ages are already declared.
That distinction matters because “old” can refer to several different things: the harvest year printed on a label, the time spent in wood before bottling, or the number of years since bottling. The study modeled declared age. A laboratory report should therefore state exactly what the submitted label claims and what period the model is estimating. If a label gives a vintage year but no maturation interval, the analyst should not silently convert that claim into a different definition of age.
The practical conclusion is straightforward: chemistry can support or challenge a provenance claim, but it is not a home authentication shortcut. Tasting can help you compare style, aroma and flavor; it cannot establish a chronological age by itself.

What the University of Cádiz study measured
In 2005, Dominico Guillén and colleagues at the University of Cádiz analyzed 30 sherries dating from 1932 through 1999. Their objective was to relate routine analytical measurements to the declared age of each wine. The panel was deliberately broad rather than built around one supposedly unique compound.
| Measurement group | What it contributes to an age model |
|---|---|
| Short-chain organic acids | Part of the overall acid profile; individual acids can move in different directions as the wine ages. |
| Higher alcohols | Additional compositional variables that help distinguish samples when considered with the rest of the profile. |
| Phenolic compounds | Signals associated in part with extraction from the oak cask and with the changing composition of the wine. |
| Total acidity | A summary acidity measurement that adds context to individual acid concentrations. |
| pH | A broad measure of acidity used alongside, not instead of, the other variables. |
Oak barrels matter because wood-derived compounds contribute to a sherry’s taste and aroma. Those compounds are not a clock with a fixed reading: extraction depends on the wine and the cask, and it is incomplete in some younger samples. That is why the researchers treated the measurements as a multivariable fingerprint.
How the statistical models estimate age
Partial least squares (PLS)
Partial least squares, or PLS, combines many correlated measurements into a smaller set of components that best explains the relationship between composition and declared age. In plain language, it looks for a weighted pattern across acids, alcohols, phenolics, acidity and pH. A variable does not have to be useful alone if it adds information in combination with the others.
The PLS model in the study predicted declared age with a mean deviation of 1.6 years. “Mean deviation” is an average distance between the model’s estimate and the declared age for the study wines. It does not mean that every bottle will be within 1.6 years, nor does it supply a confidence interval for a particular bottle.

Multiple linear regression (MLR)
The second approach was a multiple linear regression model using six components. It also combined measurements rather than relying on a single compound. Its mean deviation was 3.3 years against the declared ages.
Because the two approaches use the same general chemical evidence differently, agreement between them is informative, while disagreement signals uncertainty. For five sherries whose ages were unknown to the analysts, the estimates from the two models differed by as much as eight years. Even in those cases, the models placed the samples in a similar order from younger to older. Ranking can therefore be more stable than assigning an exact calendar age.
Which compounds rise or fall with age?
The age signal is mixed. Some measured values decreased as the wines became older, while most of the measured indicators increased. The direction of change is useful for understanding the model, but no single trend is sufficient to authenticate a bottle.

|---|---|---|
| Decreased with age | Tartaric acid, caffeic acid and calcium | These variables contributed information partly because their concentrations tended to be lower in older samples. |
| Increased with age | Acids associated with oxidative aging and phenolic compounds extracted from oak | These compounds supplied an opposing age signal and helped the models distinguish samples when combined with the decreasing variables. |
The pattern explains why a “magic age compound” is not credible. A bottle could have a high value for one phenolic compound because of cask extraction without matching the rest of the profile expected for its declared age. Conversely, a lower value for one acid does not prove that a wine is older. The model gains strength from the direction and size of many changes at once.

How accurate is the method in practice?
The reported figures are useful benchmarks, but they need their qualifications attached:
| Model or observation | Reported result | What a reader should infer |
|---|---|---|
| PLS | Mean deviation of 1.6 years | Best average fit in the study’s 30 declared-age sherries; not a guaranteed error limit for a new bottle. |
| Six-component MLR | Mean deviation of 3.3 years | A second multivariable estimate with a larger average deviation in that sample set. |
| Youngest wines | Largest deviations | Incomplete extraction of phenolic compounds from the wooden casks made the youngest samples harder to model. |
| Five unknown-age sherries | PLS and MLR estimates differed by up to eight years, while preserving a similar age order | An estimate can be directionally useful yet too uncertain to support an exact label claim. |
The study covered declared ages from 1932 to 1999. A laboratory applying the method outside that range would need to explain how its calibration set supports the extrapolation. The published results also do not establish a universal error rate for every Amontillado style, producer, cask history or storage condition.
Why young sherries are the hardest cases
Phenolic extraction from oak is not instantaneous or uniform. The researchers found that the largest age deviations occurred among the youngest sherries because extraction from the wooden casks was incomplete. A young wine can therefore lack part of the phenolic signal that the model associates with maturation, making it appear less distinct from neighboring ages.
This limitation is important when a seller presents a precise young-vintage claim. A close laboratory estimate for an older sample and a wide or conflicting estimate for a young one should not be treated as equivalent evidence. The result reflects how well the sample resembles the calibration wines, not a permanent property of all sherry.

How authentication approaches compare
The following comparison separates what the study actually supports from methods that may be useful for other reasons but do not provide the same kind of evidence.
| Approach | Evidence used | Age performance established here | Best use |
|---|---|---|---|
| PLS chemical model | Short-chain acids, higher alcohols, phenolics, total acidity and pH considered together | Mean deviation 1.6 years on the 30 declared-age sherries | Laboratory estimate when the sample fits an appropriate calibration set |
| Six-component MLR | A six-component combination of measured analytical variables | Mean deviation 3.3 years; unknown samples could differ from PLS by up to eight years | Independent model for checking the direction and plausibility of an estimate |
| One chemical marker | A single acid, phenolic compound, alcohol or other measurement | No single measured variable predicted age by itself | Supporting data only, never a standalone age test |
| Sensory tasting | Aroma, flavor and overall style | No chronological-age accuracy established | Comparing style, condition and drinking quality |
| Provenance records | Invoices, cellar histories, ownership and storage documentation | Not quantified by this chemical study | Establishing chain of custody and resolving contradictions around a laboratory result |
What a credible laboratory workflow looks like
If the age claim has financial, legal or historical importance, treat the analysis as a documented investigation rather than a consumer gadget purchase.
- Define the claim. Record the exact wording on the label, including vintage year, stated age and bottle size. Ask the laboratory whether it is estimating declared age, time in wood or another interval.
- Preserve the sample identity. Photograph the label, closure, fill level and visible condition before opening. Keep the bottle and any remaining liquid available in case a second analysis is needed. These steps document provenance; they do not alter the chemistry result.
- Request a broad analytical panel. Ask whether the laboratory can measure the categories used in the Cádiz work: short-chain organic acids, higher alcohols, higher alcohols, phenolic compounds, total acidity and pH. A lab that tests only one marker is not reproducing the study’s approach.
- Ask about calibration wines. The analyst should identify the declared-age range and type of wines used to build the model. Confirm whether the submitted Amontillado is inside that range or is being treated as an extrapolation.
- Request both model outputs when available. PLS and the six-component MLR model provide complementary estimates. Ask for the individual estimates, the difference between them and any uncertainty measure the laboratory can justify.
- Separate estimate from verdict. Compare the result with the label claim, but do not turn an average deviation into a pass/fail threshold. A result near the edge of the calibration range deserves more caution than one surrounded by closely matched reference wines.
- Combine chemistry with documents. If the estimate conflicts with the claimed age, check storage history, previous ownership and the possibility of a mislabeled or blended bottle before alleging fraud. Chemistry can identify an inconsistency; it does not by itself explain its cause.
Because the published report does not describe a consumer kit or a home procedure, a color strip, phone camera or tasting glass should not be presented as an equivalent test. The relevant measurements require laboratory analysis and statistical calibration.

How to read a laboratory report without overclaiming
Start with the reference population
Find out how many reference wines were used, which declared ages they represented and whether they resemble the bottle being tested. The Cádiz study used 30 sherries from 1932–1999; a new laboratory may use a different set. A result is only as defensible as the comparison population behind it.

Look for the model’s error description
“Mean deviation” describes average performance across a group. It is not the same as a maximum error, a guaranteed tolerance or a probability that the label is genuine. If the report provides no uncertainty interval, ask the laboratory to state that limitation plainly rather than supplying a false level of precision.
Check whether the models agree
Close PLS and MLR estimates strengthen confidence that the sample occupies a similar position in both models. A large gap—up to eight years was observed among five unknown samples in the study—means the exact number should be treated cautiously, even if both models rank the bottle similarly relative to other samples.
Pay special attention to young claims
The youngest sherries produced the largest deviations in the study because oak-derived phenolic extraction was incomplete. A discrepancy concentrated in that part of the age range is a known limitation, not automatic proof that the bottle is counterfeit.
What tasting can contribute
Tasting remains valuable for questions that chemistry does not answer well: whether the bottle is sound, whether its aroma and flavor fit the expected Amontillado style, and how it compares with another sample. Use clean, suitable sherry glasses and record observations before discussing the label to reduce expectation bias.
Do not translate descriptors such as “nutty,” “concentrated” or “fresh” into a number of years. Sensory impressions are affected by serving temperature, glass shape, oxidation after opening and storage. They can prompt a laboratory investigation or reveal that a bottle is enjoyable, but they cannot replace the multivariable chemical evidence needed for an age estimate.
What to do when the estimate and label disagree
- Small difference within the model’s typical performance: treat it as compatible evidence, not confirmation to the exact year.
- Large difference for a young sample: consider the documented limitation of incomplete phenolic extraction and seek the laboratory’s uncertainty statement.
- PLS and MLR disagree substantially: report both estimates and investigate calibration fit before drawing a conclusion.
- Chemistry conflicts with strong provenance records: recheck sample identity, storage history and possible blending or relabeling; neither paperwork nor one assay is infallible.
- Chemistry and provenance both conflict with the label: preserve the report and bottle, obtain an independent laboratory opinion and avoid presenting the discrepancy as proof until the second assessment is complete.
Bottom line
Aging an Amontillado by analysis is feasible when a laboratory measures many routine chemical parameters and applies a model calibrated against wines of known declared age. The University of Cádiz study’s PLS result—1.6 years mean deviation across 30 sherries dated 1932–1999—is encouraging, while the six-component MLR result of 3.3 years shows why a second model and explicit uncertainty matter. The method supports an evidence-based estimate, not a guaranteed date and not a home experiment.
