A sharp, thin espresso often points to under-extraction; a harsh, lingering bitterness often points to over-extraction or a shot that is running too slowly. If a shot tastes sour and bitter at once, uneven flow through the coffee puck may be involved. These are useful clues, not definitive diagnoses: roast character and personal preference matter, too. Start by measuring your shot, then adjust one variable at a time.
How to read sour, bitter, and mixed flavors
Sour and thin
A sharp or thin taste commonly means the water has not extracted enough of the coffee’s balancing flavors. A shot that reaches its target yield quickly, or looks pale and watery, supports that possibility. A light-roast coffee can also have bright acidity that is intentional and enjoyable; acidity is not automatically a flaw.
Harsh or lingering bitterness
A harsh, lingering or drying bitterness commonly points to over-extraction. If the shot is also unusually slow, the grind may be too fine and restricting flow. Roast character, temperature and residue from old coffee oils can also affect flavor, so taste alone cannot identify the cause with certainty.
Sour and bitter at the same time
Mixed sour and bitter flavors can occur when water passes unevenly through the puck: some areas may be over-extracted while others are under-extracted. Clumps, uneven distribution or a tilted tamp are worth checking, but this flavor combination does not prove channeling. Inconsistent particle size may also contribute.

Measure a baseline before changing anything
Weigh the dry coffee going into the basket and the espresso coming out, and note the shot time and how the flow looks. An espresso scale makes repeat shots easier to compare than cup volume alone. Keep a short record so you can tell whether an adjustment changed the result.

Use the recipe your basket and machine can handle as a consistent baseline. The timing examples above belong to their respective guides; they are not a single industry-wide standard.
Fix a sour shot with controlled adjustments
- If the shot is fast: Keep dose and target yield the same, then make a small adjustment finer. Pull another shot and compare its flow, time and taste.
- If flow and timing seem reasonable: Avoid repeatedly changing grind. Check whether the grounds are evenly distributed and whether the tamp is level. If those are consistent, dose, yield and brew temperature are other factors to examine.
- If sourness persists: Try one change at a time. Lavazza suggests raising temperature by 2–3 degrees when shot time is already in range; treat this as that guide’s recommendation, not a universal prescription. Check your machine manual before adjusting temperature.
Flair Espresso’s manufacturer help center describes sourness as “typically” indicative of under-extraction. Its guidance also notes that lighter roasts are typically less soluble than darker roasts, so a recipe that suits one roast may not suit another.

Fix a bitter shot without losing track of the cause
- If the shot is unusually slow: Keep dose and target yield fixed and make a small adjustment coarser. Taste the next shot before changing anything else.
- If flow is reasonable but bitterness remains: Consider a slightly shorter yield or a small temperature reduction. Lavazza suggests lowering temperature by 2–3 degrees when the shot is already in range; consult your machine manual and make changes cautiously.
- Check for stale residue: Coffee oils left on the basket or portafilter can create stale, harsh flavors. Clean those parts and follow the machine maker’s directions for group-head cleaning.
Flair describes bitter taste as usually indicating over-extraction, but that is a troubleshooting clue rather than proof. Seattle Coffee Gear lists 195–205°F as an ideal temperature range in its guide; do not treat that retailer’s range as a rule for every machine or coffee.
When a shot tastes both sour and bitter, reset puck preparation
- Dry the basket before adding coffee.
- Distribute the grounds evenly and break up clumps if present. A WDT tool is one option Lavazza recommends for clump-breaking; it is not a requirement.
- Tamp level, then repeat the same dose, yield and grind.
- Watch for visibly uneven flow or spraying and compare the result with your baseline.
If the taste changes between repeat shots made to the same recipe, preparation consistency may be part of the problem. Uneven flow is a hypothesis to investigate, not a diagnosis from flavor alone.

Check roast, freshness and routine maintenance
- Roast: A light roast’s brightness may be exactly what you prefer, while a darker roast may taste more soluble and produce a different balance. Choose a flavor you enjoy rather than trying to eliminate acidity categorically.
- Freshness: Very fresh coffee may still be releasing gas, and older coffee may behave differently. The cited guides do not establish one rest period that works for every coffee, so avoid treating a precise cutoff as universal.
- Cleanliness: Remove coffee-oil residue from the basket and portafilter, and clean the group head according to the manufacturer’s instructions. Seattle Coffee Gear includes rancid oil residue among possible causes of poor flavor.
When equipment may be limiting your adjustments
Consider equipment only after checking the recipe, puck preparation, beans and cleanliness. A grinder that cannot make small, repeatable espresso adjustments—or a machine with unstable temperature—can make troubleshooting harder, but these possibilities do not establish that an upgrade is necessary. A scale is a practical first tool because it helps measure dose and yield; it does not correct flavor by itself. A grinder upgrade is conditional on whether your current one can repeat the adjustments your coffee needs.
