Curd gravy splits when its smooth texture breaks into grainy curd-like particles and watery liquid during cooking. In kadhi, reduce the risk by bringing the yogurt closer to room temperature, whisking besan into it until smooth before heating, and cooking gently with controlled stirring. Other yogurt gravies may need a different method; besan is a standard part of kadhi, not a universal fix.
Why does curd split in gravy?
Splitting is a texture failure: the smooth yogurt base separates into visible particles and watery liquid. Cooking conditions, acidity and handling can all matter, but available guidance does not establish one temperature or pH threshold that applies to every recipe. The Indian Express discusses the problem in curd-based gravies, while NDTV’s practical guidance focuses on temperature, mixing and stirring for kadhi.
Here, “curd” means cultured yogurt or dahi used as an ingredient, not fresh curds deliberately formed from milk. The clearest guidance applies to kadhi and similar yogurt-based gravies, so follow the method for your specific dish rather than assuming every curry behaves the same way.
How to keep kadhi from curdling
- Take the chill off the yogurt. Let it come closer to room temperature before cooking; NDTV recommends this as part of its kadhi prevention method. NDTV Food’s kadhi guidance
- Make a smooth yogurt-and-besan mixture. Whisk the besan (gram flour) into the yogurt thoroughly before heating. Add water as specified by the recipe, whisking until evenly combined. Besan is a core ingredient in Gujarati kadhi: it gives the gravy body and helps prevent separation, but it cannot guarantee that every yogurt gravy will stay smooth. Dassana’s Gujarati kadhi recipe
- Heat gradually and stir steadily. As the mixture warms, use controlled stirring. Once cooking is underway, avoid vigorous whisking; prevention advice favors gentle handling rather than rough or aggressive movement. NDTV Food’s kadhi guidance
- Keep the heat gentle. Do not treat a prolonged hard boil as a universal method. Use the heat treatment specified by your recipe, especially if you are using a plant-based yogurt.
Does every curd gravy need besan?
No. Besan is part of kadhi’s traditional yogurt base, where it thickens the gravy and helps prevent separation. That does not make it an appropriate addition to every yogurt-based curry: adding flour can change a dish’s thickness and flavor, and the available guidance does not establish a universal stabilizer or ratio for non-kadhi gravies. For another curry, follow its own method for incorporating and heating yogurt.

What if you use plant-based yogurt?
Dassana’s Gujarati kadhi recipe warns that plant-based yogurt can separate or curdle if the kadhi is boiled, and advises against boiling that recipe when using it. This is specific recipe guidance, not a guarantee that all plant-based yogurts behave alike or a universal safe-temperature rule. See the recipe’s plant-based yogurt note.

There is no dependable rescue method established for every broken yogurt gravy. Reheating, blending or adding another ingredient may change the texture, and none can be promised to restore the original sauce. If you try a workaround, treat it as recipe-dependent; for the next batch, adjust the preparation and cooking method before the yogurt separates.
