A broiler pan’s slotted top is a raised grid: it holds food above the lower pan while fat and juices drain through the openings. That separation is useful when broiling foods that release drippings, but it does not remove all the fat or guarantee smoke-free cooking.

How a slotted broiler pan works

The top grid supports food closer to the broiler’s radiant heat. As food cooks, drippings pass through the slots into the lower pan rather than pooling around the food. GE explains that this arrangement lets grease and juices drain into the pan base, while its owner-manual guidance says the rack suspends meat above the drippings. Whirlpool likewise describes its pan and grid as designed to drain juices and help limit spatter and smoke. These are manufacturers’ descriptions of intended function, not quantified performance tests: the sources do not establish how much fat, smoke, or spatter the design prevents. The design separates the food from the drippings; it cannot prevent smoke, flare-ups, or burning in every situation. Fat content, food placement, oven design, and residue in the lower pan can all affect the result.

When to use the pan and grid

Use the broiler pan and grid when broiling foods that release fat or juices, particularly if your oven manual calls for the supplied pan. Whirlpool recommends centering the pan, trimming excess fat to reduce spattering, and removing the pan when you take out the food so drippings do not bake onto it in the hot oven. Its general tips suggest starting with a low rack position and adjusting as needed; the correct rack position, broil setting, and door position depend on the appliance and food, so follow the manual for your oven. GE also recommends a broil pan and grid to let fat drain into the pan, and advises checking the oven manual for food-specific rack positions. GE broiling guidance.

Foil, drainage, and smoke

Unperforated foil laid across the slotted grid blocks the openings and prevents drippings from draining as intended. Whirlpool advises against covering the grid with foil for proper drainage. GE says foil used on a grid should be fitted tightly and slit to correspond with the grid openings. Appliance instructions can differ, so use the directions for your oven and pan. Trimming excess fat and removing the pan promptly can help limit spatter and prevent drippings from baking onto the pan, but neither step guarantees smoke-free broiling. A dirty lower pan may also contribute to smoke.

What to use if you do not have a broiler pan

Whirlpool lists a shallow metal pan with a baking rack and a cast-iron skillet as possible alternatives for some broiling tasks. A skillet alone does not provide the same raised-grid drainage arrangement. Before using a substitute, check that it is rated for your oven’s broiler and fits safely. Cleaning and handling

After broiling, let the pan and rack cool slightly, drain the fat, and clean them with products approved for their material. GE cautions against putting metal broiler pans and racks through the oven’s self-clean cycle: they may warp, and residual grease could ignite at self-clean temperatures. GE notes that its advice differs for porcelain-enamel parts, so check the instructions for the exact pan and oven. GE cleaning guidance.

Choosing a replacement

Measure the oven and check the appliance manufacturer’s replacement-parts information before buying. A replacement must fit the oven and tolerate broiler heat; a raised grid and separate lower pan are needed if you want the same drainage function. Whirlpool lists model 4396923 as a porcelain broiler pan and roasting-rack set, with published dimensions of 16¾ × 12¾ × 1½ inches. Those are the manufacturer’s product dimensions, not a performance statistic; confirm current dimensions, availability, and compatibility before purchase. Whirlpool product specifications.
