Store plain breads and similar baked goods according to the texture you want; handle cream-, custard-, dairy- and cheese-filled items as perishables. Refrigerate perishable bakery items within 2 hours, or within 1 hour when the surrounding temperature is above 90°F (32°C). Freezing can preserve food safely while it remains frozen, but it does not make food safe if it was mishandled beforehand.
First, decide whether it is plain or perishable-filled
Plain bread, rolls, muffins and cakes without custard filling are different from pastries or desserts containing cream, custard, cheese or other perishable ingredients. The first group is often mainly a freshness problem as it dries or stales. The second needs time-and-temperature care, even if it still looks and smells fine.
FoodSafety.gov says to refrigerate perishables within 2 hours, or within 1 hour if the surrounding temperature is above 90°F (32°C). Its guidance is a safety limit for perishable food, not a universal pantry shelf life for every bakery item. Do not use smell, taste or a dry texture to decide whether a perishable item left out too long is safe.
How do I store day-old bread?
For plain bread and other non-custard baked goods, choose between room-temperature storage and freezing based on when you expect to eat them and how you want them to taste. The federal sources cited here do not establish one pantry shelf life or best-quality freezer duration for plain bread, so use the bakery’s packaging directions when available and check the product for its own storage instructions.

Do cream-filled pastries need to go in the fridge?
Yes. Treat cream-, custard-, dairy- and cheese-filled bakery items as perishable. Refrigerate them within the 2-hour limit, or within 1 hour when the surrounding temperature is above 90°F (32°C), and keep the refrigerator at or below 40°F (4°C). These are FoodSafety.gov recommendations for perishables generally; the appropriate storage period depends on the specific product.
The federal Cold Food Storage Chart gives specific guidance for some pies, not every bakery item:

These durations are the chart’s entries for the named pies; they should not be applied automatically to every tart, pastry or cake. Follow the product’s storage directions when provided.
Can I freeze bakery items?
Freezing is an option for plain breads, rolls, muffins and cakes without custard filling. FoodSafety.gov’s thawing chart classifies those items as refreezable in the chart’s thawing scenarios. That does not mean every bakery product is suitable for freezing: the same chart says custard- or cheese-filled cakes, pies and pastries should be discarded if they have been above 40°F (4°C) for more than 2 hours.

Keep the freezer at or below 0°F (-18°C). FoodSafety.gov explains that “Freezing does not destroy harmful germs, but it does keep food safe until you can cook it.” Freeze food while it is still safe; freezing does not undo unsafe time at room temperature or destroy harmful germs.
Can I reheat day-old pastries?
Reheating can help restore warmth and, in some cases, crispness. It is a texture choice, not a way to rescue a perishable item that sat out beyond the safe time limit. FoodSafety.gov’s general leftover guidance lists 165°F (74°C) for reheating; the cited source does not give a universal oven, toaster or microwave time for bakery goods.

For a filled item, reheating does not replace refrigeration or the time limits for perishable food.

Discard a perishable-filled item that has been left unrefrigerated beyond 2 hours, or beyond 1 hour when the surrounding temperature is above 90°F (32°C). For custard- or cheese-filled cakes, pies and pastries specifically, the federal thawing chart says to discard them after more than 2 hours above 40°F (4°C). Do not rely on tasting or smelling the food to override those limits.

Keep the refrigerator at or below 40°F (4°C) and the freezer at or below 0°F (-18°C), as FoodSafety.gov recommends. For a product with its own label directions, use those directions alongside the general safety limits.
