Species tells you what kind of coffee plant produced the beans; variety identifies a type within that species; and roast level tells you how the harvested and processed beans were roasted. They describe different things, so a bag can accurately say “Arabica, Gesha, light roast” all at once.

What each coffee label means

Species: the kind of coffee plant

A species is a botanical classification. The two coffee species most familiar to consumers are Arabica (Coffea arabica) and Robusta (Coffea canephora). World Coffee Research’s catalog covers these two species in wide cultivation, and the National Coffee Association also identifies them as the two most common coffee plant species. World Coffee Research’s catalog notes that Robusta accounts for approximately 40% of global coffee production; the figure is approximate and the page does not specify a publication year. The National Coffee Association’s overview explains the basic coffee categories and roasting process.

Variety: a type within a species

A variety is a distinct type within a species. Bourbon and Gesha, for example, are named Arabica varieties—not separate species and not roast levels. World Coffee Research’s catalog includes varieties or cultivars within both Arabica and Robusta. Its usual criteria for a variety are distinctness, uniformity, and stability, based on UPOV’s definition. The catalog also includes some regionally well-known, widely grown entries that do not meet the uniformity or stability criteria.

“Cultivar” often appears as a near-synonym for “variety” in coffee writing, although terminology is not perfectly consistent. The International Trade Centre’s Coffee Guide distinguishes a cultivar as the result of genetic improvement and uses “varietal” for a specific instance of a variety. For everyday bag labels, “variety” is the clearest general term.

Roast level: how the beans were roasted

Roast level describes a step that happens after coffee cherries have been harvested and their seeds extracted and dried. Roasting transforms green coffee into the beans used to brew coffee. Light, medium, and dark are common roast categories. Roast is a treatment applied to the coffee; it does not change the plant’s species or variety. The National Coffee Association’s bean guide gives a consumer overview of the process and common roast categories.

How species, variety, and roast fit together on a bag

Consider a label that reads “Arabica, Gesha, light roast.” Each part answers a different question:

  • Arabica identifies the species.
  • Gesha identifies a named variety within Arabica.
  • Light roast describes how the beans were roasted.

A coffee label may also name its origin or processing method. Those details add further information; they do not replace the species, variety, or roast descriptions. A variety name does not guarantee one particular flavor: growing region and preparation also matter.

What roast names can—and cannot—tell you

Roast level can help set flavor expectations, but roast names are not all used with the same precision. Light, medium, and dark are familiar broad categories. Terms such as French, Italian, and Full City can be flexible or arcane, as the Specialty Coffee Association (SCA) discusses in its article on why roast level matters to consumers. Do not assume every roaster uses those names identically. The SCA’s standards page listed its SCA-131 Coffee Roast Level: Test Method as in development when accessed; that status may change. Check the SCA standards page for its current status.

Roast is useful as a flavor clue, not a substitute for species or variety information. SCA Senior Advisor for Scientific Communication Peter Giuliano described roast level as “a good indicator of flavor” for specialty coffee drinkers. The same SCA article reports that a 2020 study found roast level was the most powerful driver among the sensory variables examined for drip-brewed coffee. That finding applies to the study’s design and should not be generalized to every coffee or brewing method.

How to compare coffees without mixing up the labels

If you want to understand how species or variety affects the cup, compare coffees while holding other factors as steady as practical. Choose bags with clear species and variety information, similar roast levels and roast dates, and use the same brewing method. If the roast differs, roast itself becomes another factor in the comparison. A seller’s variety claim is only as informative as its traceability and labeling.

When shopping or comparing labels, look for:

  • Species, such as Arabica or Robusta.
  • A named variety, if the seller provides one.
  • Roast level and, where available, the roast date.
  • Origin and processing method, which describe other parts of the coffee’s history.
  • Clear, traceable variety information rather than assuming a named variety guarantees a particular taste.
