Yes, you can heat and dry material in a vacuum. Reduced pressure lets moisture evaporate at a lower temperature, while a vacuum oven heats its load mainly through contact with warmed shelves and through radiation—not ordinary circulating air. Vacuum drying is not the same as freeze drying: freeze drying starts with frozen material and removes ice as vapor.
How does vacuum drying work?
Vacuum drying removes liquid moisture by evaporation while the material is at reduced pressure. As pressure falls, water’s boiling temperature falls too, so moisture can evaporate at a lower material temperature than it would at atmospheric pressure. That can help when a material is sensitive to heat, although it does not guarantee that every material can be dried safely or without damage. ASHRAE’s discussion of industrial drying systems describes this lower-boiling-point principle.
Vacuum drying also has specialized applications beyond ordinary laboratory samples. ISO 14952-5:2003 covers cleaning and drying space-system fluid components; it says vacuum drying can remove trapped fluids from intricate parts when normal purging has not worked. ISO reports that the standard was reviewed and confirmed current in 2026.
Can you heat things in a vacuum?
Yes. Removing most of the gas reduces heat transfer by convection, but it does not remove all routes for heat to reach an object. In a vacuum oven, heat reaches a sample mainly by conduction where it contacts a heated shelf, and also by thermal radiation from warm surfaces. A Sheldon Manufacturing vacuum-oven manual states: “In a vacuum oven, heat transfer takes place in part through direct infrared radiation. A significant portion, however, takes place through conduction.”

That is why shelf contact and load arrangement matter. A sample resting well against a heated shelf may warm differently from one suspended or poorly connected to it. A chamber display is not automatically the sample’s temperature: pump-down can change the measured environment and temperature distribution. For a particular process, follow the oven manual and use suitable measurement methods rather than assuming the displayed chamber value describes every part of the load.
How does a vacuum oven work?
A vacuum oven combines a sealed chamber, heater, temperature controls, vacuum connection and shelves. The pump lowers chamber pressure; the heater then supplies energy to the load through the oven’s designed heat-transfer paths. Designs vary. For example, a documented Thermo Scientific vacuum oven uses warm chamber walls for radiant heating and aluminum shelves to conduct heat to samples.

Vacuum ovens are intended for controlled heating or drying at reduced pressure, but a generic description is not a safe operating procedure. The oven and the connected vacuum system must be appropriate for the process. Use the specific model’s manual and stay within its pressure, temperature, chemical-compatibility and loading limits. Thermo Fisher’s cited manual cautions that its chamber is not designed for exposure to certain concentrated chemicals. Flammable solvents, reactive substances and volatile vapors call for equipment specifically rated for them and competent process controls; do not heat unknown substances on the assumption that vacuum makes them safe.
How is vacuum drying different from freeze drying?
The key difference is the starting state of the water. Vacuum drying generally evaporates liquid moisture at reduced pressure. Freeze drying, or lyophilization, freezes the material first and then removes ice by sublimation: the ice changes directly from solid to vapor without first becoming liquid.

- Freeze the product. The material’s water is converted to ice.
- Primary drying. Under reduced pressure, controlled heat supports sublimation of the ice.
- Secondary drying. Further drying removes remaining water by desorption.
The FDA’s 1993 lyophilization inspection guide describes these stages as freezing, primary drying and secondary drying. ASHRAE notes that freeze-drying systems capture or absorb the vapor with a cold condenser or desiccant, and that the process is slow and expensive but useful for heat-sensitive materials.
For food, the USDA FSIS description of shelf-stable food explains that frozen food is placed in a special vacuum cabinet and its ice becomes vapor without first becoming liquid. Freeze drying is not a food-safety sterilization step; the USDA says freeze-dried food must be packaged in moisture-proof, hermetically sealed containers.

Which method should you choose?
Choose based on the material and the result you need, not just on whether a vacuum is available. Compare the material’s ability to tolerate freezing, heat sensitivity, risk of oxidation or distortion, how moisture movement may affect it, the target moisture and product quality, batch size and time, chamber pressure and temperature range, shelf contact and heat-transfer arrangement, and safe handling of vapor or solvents. The sources do not establish a universal drying cycle, pressure or temperature for these varied uses.
For wet paper records
Preservation guidance illustrates why the methods are not interchangeable. The National Archives comparison of drying methods favors vacuum freeze drying for large quantities of wet records in suitable circumstances. Freezing immobilizes water and can limit movement of soluble media; coated paper is less likely to stick during freeze drying. By contrast, ordinary vacuum thermal drying can distort paper and promote sticking or movement of soluble inks. These are record-preservation observations, not guarantees for other materials or industrial processes. The Archives also notes that records cannot be accessed during drying and that frozen transport adds logistics and cost.

What should you check before using a vacuum oven?
- Confirm the oven’s allowed pressure, temperature, load and materials against the exact model manual.
- Check whether the process needs heated-shelf contact, warm-wall radiation, or another specified arrangement; do not assume ordinary air circulation is doing the heating.
- Determine whether the sample’s temperature must be measured directly and use a probe compatible with the oven and process.
- Verify that the pump, connections and vapor-handling system are suitable for the material, including any solvents or other volatiles.
- Do not apply a cycle or safety limit from another material, oven or application without validation.
A vacuum oven is a heated pressure chamber exposed to external atmospheric pressure as well as an electrical and process hazard. Treat its manufacturer’s limits and safety instructions as essential, not optional.
