For a browned, lightly crisped finish, put already-tender ribs under the oven broiler for a short final blast. The broiler is the quick extra step—not a replacement for baking, smoking, or otherwise cooking the ribs through. Treat the roughly 10-minute finish suggested by Tasting Table’s 2025 article as a starting point, and watch closely: broilers and glazes vary.

How do I get crispy ribs in the oven?

Cook the ribs using your chosen recipe until tender, then finish them under the broiler. The intense, direct heat browns the surface and can add a lightly crisped, charred edge. The broiler temperature is not a single universal setting; Tasting Table describes broiler heat as around 500–550°F, but your oven’s broiler may differ.

  1. Cook the ribs by your recipe until tender. Use a pan or cookware that is explicitly safe for broiler use.
  2. If you want a sauced finish, brush on the glaze before broiling. Sauce can darken and burn quickly, so keep the ribs in sight.
  3. Set the oven to broil and position the ribs near the upper broiler element. Begin checking early and often; the approximately 10-minute timing in Tasting Table’s article is not a guaranteed duration.
  4. Take the ribs out when the surface is browned or lightly charred to your liking. If any portions burn, cut those portions off rather than treating blackened surfaces as the goal.

Scott Thomas, co-creator of The Grillin’ Fools, told Tasting Table: “Broiling ribs will make a more pronounced flavor crust.”

Can I broil ribs after baking?

Yes. Broiling works as a finishing step after the ribs have baked until tender. It supplies strong direct heat to the outside, while the earlier cook does the work of making the ribs tender. A broiler finish cannot make undercooked ribs safe or tender simply by browning the surface.

How do I get a charred finish without firing up the grill?

The oven broiler is the indoor option: it needs an oven and broiler-safe cookware, but avoids setting up an outdoor grill. A grill is another way to finish glazed ribs. The Associated Press’s 2025 rib recipe uses low or indirect grill heat for its finish and cautions readers to watch the sauce so it does not begin to burn. In a different approach, Food Network’s Katie Lee Biegel recipe describes grilling for a charred finish. These are alternatives, not identical methods: use the equipment you have and monitor the surface whichever route you choose.

How do I know the ribs are safe to eat?

Do not use color, grill marks, char, or browned sauce to judge food safety. USDA’s Food Safety and Inspection Service says those visual cues do not establish that meat is safely cooked and recommends using a food thermometer. For whole cuts of pork, its guidance is a minimum internal temperature of 145°F (63°C), followed by at least a three-minute rest. That is a safety minimum; it does not determine whether ribs have reached the tenderness or texture you prefer. See USDA FSIS guidance on grilling food safely.

Aim for browned or lightly charred flavor rather than a blackened surface. USDA FSIS advises cutting burned portions off meat; its guidance on grilling and burned meat offers that practical caution.
