Choose a conventional oven if your cooking is mostly baking, roasting, browning, broiling, or preparing large batches. Choose a steam oven if you regularly want moist-heat cooking or gentle reheating. If you want both, a combi-steam oven combines steam and conventional modes—but check its actual mode list and usable capacity before treating it as a replacement for a full-size oven.

What is the difference between a steam oven and a conventional oven?

A conventional oven cooks with dry heat. A convection oven is a conventional oven that circulates heated air with a fan. A steam oven generates water vapor for moist-heat cooking. A combi-steam oven offers steam alongside conventional cooking modes, though the specific modes vary by model.

Be cautious with the phrase “added steam.” Bosch distinguishes its added-steam convection models from full steam ovens: added steam can help with moisture for selected cooking, but Bosch says those models cannot steam food. Check the manufacturer’s specifications and manual rather than assuming that any oven advertised with a steam function supports full steam cooking. Which oven fits your cooking habits?

Choose a conventional oven for dry-heat cooking and capacity

A conventional oven is usually the practical choice if you mainly bake, roast, brown, broil, or cook multiple large dishes. Its dry-heat modes are central to those tasks, and a larger cavity may matter more than steam features if you often prepare batch meals or use oversized cookware.

Consider a steam oven for moist-heat cooking

Steam is worth considering if you expect to use moist-heat cooking for foods such as vegetables, seafood, or rice, or want a steam-based mode for gentle reheating. These are examples tied to particular manufacturers’ appliances, not a guarantee that every steam oven has the same modes: Wolf identifies seafood, vegetables, and rice as suitable for its steam mode, while Thermador describes steam-assisted reheating as a way to help food avoid drying. Consider combi-steam if you want both kinds of cooking

A combi-steam oven may suit a household that wants moist cooking and conventional baking or roasting from one appliance. The category does not guarantee the same functions across brands. Miele describes its combi-steam category as a full steam oven with traditional oven modes; Wolf’s current CSO mode list includes steam, convection, convection humid, convection steam, broil, bread and pastry, sous vide, and reheat. Confirm that the model you are considering has full steam capability and the conventional modes you need. What to check before buying

1. Confirm the type of steam function

Find out whether the appliance is steam-only, combi-steam, or a conventional convection oven with added steam. A feature described as “steam” does not by itself establish that the oven can fully steam food.

2. Compare usable capacity and installation dimensions

Check usable cavity dimensions, shelf positions, and the cookware or dishes you regularly use. Also verify the cabinet cutout separately from the oven’s external dimensions. Bosch lists 60 × 60 cm and 60 × 45 cm formats as examples in its range; those are not universal capacity standards or measures of usable cooking space. If you plan to replace your only oven, make sure the cavity can handle your largest regular meals.

3. Check how the oven gets water

Some residential models use a refillable tank rather than a mains water connection. Bosch describes tank-based models that do not need a mains connection, but setup depends on the exact model and market. Confirm the water arrangement in the documentation for the appliance you intend to buy.

4. Understand maintenance requirements

Follow the manual’s instructions for water quality, draining, and descaling. Bosch describes an automatic descaling program for its range; do not assume another brand or model has the same feature.

5. Expect model-specific recipes and settings

Steam and combination modes may require different settings from familiar dry-heat recipes. Thermador offers a rule of thumb that steam-convection recipes may take about one-quarter less time, but that is guidance rather than a dependable conversion for every dish. Use the exact oven manual and check food for doneness.

6. Treat performance and nutrition figures as specific test claims

Bosch Home UK reports “up to 54% more nutrients” and “up to 10% more Vitamin C” for broccoli, citing University of Hohenheim test results dated 5/2022 and 10/2022. The page also reports that green beans and carrots were up to 50% quicker, and potatoes up to 35% faster, with Steam Function Plus compared with cooking using steam at up to 100°C; Bosch attributes these results to BSH laboratory tests in 2022. 7. Compare energy and water information for the right market

Use the energy label and product specifications for the exact model and market. The U.S. Environmental Protection Agency’s May 2023 guidance says steam and combi-modes require steam generation, an energy- and water-intensive process, but its guidance concerns commercial combination ovens. It does not establish residential energy costs or savings. No neutral residential head-to-head figure for energy, water, or operating costs is available in the sources cited here. Can a steam oven replace a conventional oven?

It depends on the model’s modes, capacity, and your routine. A steam-only oven is a specialist appliance and is best treated as a complement when you also rely on dry-heat baking, browning, or high-volume cooking. A combi-steam oven can serve as a single oven if it includes the conventional modes you need and its cavity fits your regular dishes. If the steam appliance is compact or your meals require several large trays, keep a conventional oven or another large-capacity option.

Steam combined with convection can help keep the interior moist while browning the exterior, but the result depends on the mode and recipe. Thermador describes intermittent steam assist for selected convection modes; Wolf describes its convection-steam mode as maintaining a moist interior while browning and crisping. Those are manufacturer descriptions of specific appliances, not a promise that every steam oven will produce the same result.
