Choose stainless steel for a low-maintenance, non-reactive pan that handles acidic dishes and pan sauces; choose seasoned cast iron for searing, roasting, baking, and cooking where its oven-capable form suits the job. If you want cast iron for tomato sauce or other acidic foods without seasoning concerns, consider enameled cast iron: it has a different cooking surface and care routine.

Choose seasoned cast iron for searing, roasting, and baking
Seasoned cast iron is a fit when you want a rugged iron pan for jobs such as searing, roasting, baking, grilling, or outdoor cooking. Lodge describes those uses for its seasoned cast iron cookware. The surface is oil seasoning baked onto the iron; Lodge says its products come factory-seasoned and ready to use. That means you can cook with a new pan, not that it is maintenance-free. It is a less convenient choice for long-cooked, highly acidic or alkaline foods: Lodge warns that these can wear down seasoning when cooked in large quantities for extended periods. The issue is the seasoned surface, not a blanket rule that all cast iron must avoid every acidic ingredient.

Choose enameled cast iron when you want iron with an enamel surface
Enameled cast iron is distinct from bare, seasoned iron. The porcelain surface bonded to the iron resists acidic and alkaline foods and does not require seasoning, according to Lodge. How to use and care for each surface
Stainless steel: preheat carefully and wash after cooling
For the stainless cookware covered by its guidance, All-Clad recommends starting on low to moderate heat, adding oil after preheating, and allowing food to release before turning it. Let the pan cool before washing it with soap and a sponge; dry it afterward to reduce water marks. For stubborn marks, the guide recommends a nonabrasive cleanser. Seasoned cast iron: wash, dry promptly, and oil lightly
Lodge says mild dish soap is acceptable on seasoned cast iron. After washing, dry the pan promptly and rub on a light coat of oil to help prevent rust. Enameled cast iron: warm gradually and follow enamel care
Lodge advises warming enameled cast iron gradually with oil or liquid rather than heating it empty on a stovetop. Check the exact pan before buying or using it
Material alone does not tell you whether a particular pan fits your stove, oven, or grip. Compare the model’s construction, dimensions, weight, handle shape, induction compatibility, and oven rating. The cited manufacturer pages do not provide a controlled pan-to-pan comparison for those factors.
- Oven limit: All-Clad’s care guide gives a 600°F limit for the stainless cookware it covers. Lodge cautions that handles or knobs can affect oven guidance for individual products. Can you cook tomato sauce in cast iron?
For seasoned cast iron, avoid treating long-simmered tomato sauce as a routine use: Lodge warns that large quantities of very acidic food cooked for extended periods can break down the seasoning. Enameled cast iron is the iron-based alternative Lodge identifies as resistant to acidic foods.
