For a classic baked potato, choose a firm russet with smooth, fairly clean skin and no green areas, sprouts, soft spots, shriveling, or notable damage. Russets are a strong default for baking, but a good-looking potato still deserves a quick inspection.
Which potatoes are best for baking?
Choose russets for a classic baked potato. The USDA’s December 2012 russet potato fact sheet says, “Russet potatoes are best for baking.” Purdue Extension also considers russets better for baking. That makes russets the practical default—not the only variety that can be baked.
What should a good baking potato look and feel like?
Use these quick checks while shopping:
- Firm: The potato should feel solid, not soft or yielding. USDA’s U.S. No. 1 grade standard lists firmness among its requirements.
- Fairly smooth, with few eyes: Iowa State University Extension recommends selecting firm, smooth potatoes with few eyes.
- Fairly clean and reasonably well shaped: These are also qualities named in the USDA U.S. No. 1 standard. A grade label can be a useful quality cue, but inspect the potato itself too.
- Free of warning signs: Avoid green areas, sprouts, soft spots, shriveling, and substantial cuts or dark damage.

These are practical shopping cues, not a demand to reject every potato with a minor cosmetic blemish. USDA grade standards address potatoes assessed as lots under formal tolerances; the standard is not a rule that every slight flaw makes an individual potato unusable.
Why is green skin a warning sign?
Sunlight can cause green discoloration in potato skin and, depending on exposure, in the flesh. USDA consumer guidance describes green portions as bitter; USDA inspection instructions discuss the discoloration and solanine. Because the cited guidance does not establish a universal safe amount of green, choose an ungreen potato when shopping rather than trying to judge a threshold.

If a potato at home has green-tinged areas, Purdue Extension advises removing the green-tinged skin and flesh and cutting out sprouts. Do not treat this as a precise safety test: the cited guidance does not specify a safe green-area amount.
Does a USDA grade label guarantee a good baking potato?
No. USDA U.S. No. 1 potatoes must be firm, fairly clean, and fairly well shaped, along with meeting specified size and defect requirements. USDA consumer guidance explains that grades designate quality levels and that grading or official inspection is voluntary. A grade label is a standardized quality signal when present; it does not by itself establish the potato’s variety, its freshness at the moment you buy it, or how it will bake.

How should you store potatoes after buying them?
Keep potatoes in a cool, dark, well-ventilated place. The USDA russet fact sheet advises a cool, dry, dark location and says not to wash potatoes before storage; Iowa State Extension also recommends ventilation. Keep them out of prolonged light exposure, which can cause greening. Rinse and scrub them before cooking.
