Neither nonstick nor stainless steel bakeware is best for every kitchen. Nonstick is usually the more convenient choice when easy release and cleanup matter most; stainless steel suits bakers who want an uncoated surface or a pan with a higher manufacturer-stated heat limit. For either, the exact pan’s construction, finish, shape and care instructions matter more than its broad material label.
How nonstick and stainless bakeware compare
This is a comparison based on manufacturer guidance, not a controlled side-by-side baking test. Results can vary by pan design, oven and recipe, so use the recipe’s recommended pan size and check the instructions for your specific bakeware.

KitchenAid’s general guidance is that bakeware material affects results and that bakers should follow the manufacturer’s recommendations and the recipe’s specified pan size. A label such as “stainless” or “nonstick” does not tell you every detail about the pan’s construction or finish.
When nonstick is the practical choice
Choose nonstick when straightforward release and cleanup are your priorities, you are willing to follow the pan’s care restrictions, and the recipe’s temperature is within that exact product’s oven limit. It can be especially helpful for cakes or other bakes that are difficult to release intact. Grease the pan as directed by the recipe and manufacturer; nonstick does not mean every bake can be released without preparation.

Protect the coating according to its maker’s instructions. For example, All-Clad says to avoid cooking spray and use nonstick-safe, silicone or wooden utensils on Pro-Release; Nordic Ware’s instructions for its Naturals nonstick bakeware advise against metal utensils and abrasive cleaning tools. These rules are product-specific, so do not assume they apply identically to every coated pan.
When stainless steel makes sense
Consider stainless if you prefer an uncoated surface or if a specific stainless product’s stated temperature limit better fits your recipes. Check the construction and the maker’s instructions rather than assuming all stainless bakeware has the same heat tolerance or care requirements.

Do not choose stainless on the assumption that it always browns more evenly. KitchenAid’s oven guide warns that stainless can produce uneven browning. Wolf/Sub-Zero also notes that stainless is a poor heat conductor and describes differing heating rates between a pan’s bottom and sides; an aluminum core, as in All-Clad’s tri-ply example, changes the construction but does not justify a universal outcome claim.

- Match the shape first: Compare like-for-like pans, such as two sheet pans or two cake pans. Shape and size affect how a recipe fits the pan, and KitchenAid recommends using the size specified in the recipe.
- Check the exact temperature rating: Confirm the product’s oven limit before using it for a high-temperature bake. Do not transfer one brand’s rating to other nonstick or stainless pans.
- Consider the desired crust: KitchenAid’s general guide associates dark, dull or nonstick finishes with brown, crisp crusts, while its guidance for stainless describes lighter, golden crusts and possible uneven browning. Treat those as general tendencies, not guarantees.
- Read the care instructions: Washing method, permitted utensils and cleaning products can differ between products, including within the same broad material category.
- Prioritize the actual construction: Finish, layers and core material can affect behavior. Check the maker’s description and recipe guidance instead of relying on “nonstick” or “stainless” alone.
For an even-browning priority, consider the exact pan’s design, construction and color alongside the recipe and appliance guidance. No single material label settles the question for every oven and bake.
