There is no single color, squeeze, or smell test that works for every fruit. First identify the fruit and whether it continues to ripen after picking; then use a cue specific to that fruit. Color can mislead, touch is subjective, and citrus is best judged by tasting a sample.

First ask whether it ripens after picking

Some fruits continue to ripen after harvest; others reach their peak sweetness on the plant and do not become sweeter once picked. Iowa State University Extension describes these as climacteric and non-climacteric fruits, respectively. Mango and avocado are examples of climacteric fruit, while citrus is non-climacteric. Use this distinction as a starting point, not as a substitute for advice about a particular crop or cultivar. Iowa State University Extension explains the difference.

Use the cue that fits the fruit

Citrus: taste it

Rind color is a poor guide to citrus maturity: many citrus fruits develop color before they are ready to eat. A picked citrus fruit does not ripen further or become sweeter, so taste a sample rather than waiting for a greener rind to turn orange. UC ANR puts it plainly: “The only way to determine maturity is to taste the fruit.” Read UC ANR’s citrus harvest guidance.

Mango: distinguish maturity from eating ripeness

For mangoes still on the tree, filled-out shoulders and the nose—the end opposite the stem—are maturity clues. In one UF/IFAS guide, flesh near the seed changing from white to yellow is also described as a sign before peel color changes. Skin color varies by cultivar, so do not use one expected shade as a universal rule. That guide says a picked mango may take several days or more to ripen, depending on how mature it was at harvest. For judging a cut mango across cultivars, the National Mango Board’s postharvest manual identifies flesh color as the most reliable ripeness indicator. It cautions that both hand-compression firmness and aroma are subjective and imprecise. Consult the National Mango Board postharvest manual.

  • Carambola: Pick after some color appears but before the fruit is entirely yellow.
  • Sapodilla and mamey: A small nick can reveal brown or red flesh; white latex indicates the fruit is not ready.
  • Jackfruit: Look for changes such as separating, flattening spines and a color shift.
  • Lychee: Look for fruit that is round and red.
  • Longan: Look for fruit that is plump and rounded.
  • Sugar apple: Segments beginning to separate are a harvest cue.

These are crop-specific grower signs, not rules for every fruit at a grocery store. UF/IFAS Miami-Dade County’s mango advice also links a color break and fully filled shoulders with readiness on the tree, while noting that mango continues to ripen after harvest. How to use touch and smell without damaging fruit

For some fruits, a gentle yield to light pressure or a ripe aroma can help. Use only light pressure; squeezing hard can bruise fruit, and feel is not a precise measurement. In mangoes especially, the National Mango Board manual describes hand firmness and aroma as subjective and imprecise, so combine them with fruit-specific signs rather than treating either as a definitive test.

When a measurement is useful

A refractometer measures soluble solids in juice. The National Mango Board manual presents this as a specialized mango quality measure: soluble-solids content estimates sugar content and helps indicate ripe mango quality. The manual lists mature-green mangoes at a minimum 7% to 9% at harvest and ripe fruit at an ideal 14% to 20%; these mango-specific technical ranges are not thresholds for other fruit. A refractometer is unnecessary for ordinary kitchen checks and is not a general-purpose ripeness detector.

For a fruit from your own tree

Harvest timing can vary by species, cultivar and location. Identify the fruit and cultivar if possible, then check a local extension guide for that crop rather than relying on a universal color chart or squeeze test. The examples above illustrate why a cue that works for one fruit may not work for another.
