Use the package’s storage directions, guard dry goods against moisture and pests, and treat storage timelines as quality guidance—not permission to keep damaged or questionable food.
Choose a cool, dry, stable storage spot
USDA Food Safety and Inspection Service (FSIS) calls foods that can be safely stored at room temperature “shelf stable.” That category depends on the product and its label; not every packaged food belongs in a pantry.
Keep shelf-stable foods away from heat extremes, dampness, and household chemicals. Avoid storing them above or beside a stove, under a sink, or in a damp garage or basement. Heat can reduce quality, while moisture can damage packaging and encourage mold.
- Choose a pantry or cupboard that stays cool and dry.
- Keep food separate from cleaning products and other poisons.
- Check package directions before storing any product at room temperature.
For canned goods, FSIS says temperatures below 85°F are best and temperatures above 100°F are harmful. These are storage-condition recommendations, not a substitute for checking the can or its label.

Protect dry staples from moisture and pests
Inspect bags and boxes of rice, pasta, flour, cereal, mixes, sugar, spices, and other dry goods for holes or tears that could let in moisture or insects. USDA FSIS says plastic or glass containers can add protection for dry mixes, rice, cereal, and pasta. A clean, suitable container is an optional extra layer; it does not make food last indefinitely or override the package directions.
If you transfer food, keep its identity and any relevant package instructions available. Use containers that are easy to clean and keep dry before refilling. Do not assume a container is airtight unless its design has been verified.

Use storage timelines as product-specific guidance
Storage charts describe typical guidance, not a guarantee for every brand, formulation, package, or pantry. FSIS lists the following examples for shelf-stable products:

The FSIS page does not state a publication year for these figures. Over time, shelf-stable foods can lose freshness, flavor, texture, or nutritional quality. Follow the label and discard food if its packaging or contents appear compromised.

Check canned goods before using them
Store commercial cans in a cool, dry place and rotate stock so older items are used first. Before opening or using a can, reject it if it is swollen, leaking, punctured, extensively rusted, or deeply dented. Never taste food from a suspicious can: botulinum toxin cannot be reliably detected by taste.
Some cans and packaged foods carry a “Keep Refrigerated” direction and are not shelf-stable. Follow that direction rather than assuming that a sealed package can go in the pantry.

Follow refrigeration and freezing directions
For foods that require cold storage, the U.S. Food and Drug Administration recommends keeping the refrigerator at or below 40°F (4°C) and the freezer at 0°F (-18°C). Appliance thermometers can help check that your refrigerator and freezer are at those temperatures. The package label takes precedence over a general pantry rule.

Flour is a dry staple, but dry storage does not make it safe to eat uncooked. The FDA states, “Flour is a raw food”: milling does not kill harmful bacteria that grains may carry. Do not taste raw flour, dough, or batter, and cook foods containing flour fully according to their directions. Home heat-treatment is not a reliable substitute for cooking.
