To sharpen a chef’s knife without taking off more steel than necessary, follow the knife maker’s angle and tool guidance, secure the stone, use light pressure, and stop when the edge is restored. First decide whether the knife needs honing—realigning its existing edge—or sharpening, which removes a small amount of steel to form a new edge.
Decide whether the knife needs honing or sharpening
Honing is routine maintenance: it realigns an existing edge. Sharpening abrades steel to reset an edge that honing no longer restores. Because sharpening removes material, do not automatically grind the knife whenever it feels less keen. WÜSTHOF and Victorinox both distinguish the two jobs in their care guidance: WÜSTHOF’s knife-sharpening guide and Victorinox’s UK sharpening and honing guide.
Use the angle specified for your knife
There is no single angle established here for every chef’s knife. Follow the knife maker’s instructions for the particular blade and tool you are using.
- WÜSTHOF specifies 14 degrees for sharpening its knives on a whetstone. It also gives 14 degrees for honing a standard knife and 10 degrees for honing an Asian-style knife with its steel. These are WÜSTHOF instructions, not universal settings.
- Victorinox’s UK guide specifies a 20-degree angle for honing with its steel, with five passes per side. That is a honing instruction for its steel, not a general sharpening angle for chef’s knives.
The guidance differs because the makers are describing different knives and tools. Do not substitute one maker’s number for your knife’s manual. WÜSTHOF also describes preset-angle alternatives, including a guide slider intended to hold its 14-degree angle for WÜSTHOF standard knives; that angle should not be assumed suitable for other blades.

Sharpen with a whetstone, carefully
Prepare the stone and work surface
- Check the knife maker’s care instructions and the stone maker’s directions before starting. Stone preparation varies. WÜSTHOF says to soak its whetstone for approximately ten minutes and keep water on it during sharpening; treat that as guidance for the WÜSTHOF stone, not every whetstone.
- Place the stone on a flat, slip-resistant surface so it cannot shift while you work. WÜSTHOF explicitly recommends a stable, nonslip surface.
Keep the angle steady and pressure light
- Hold the blade at the angle specified for your knife and move it along the stone, following the curve of the edge. Consistency matters more than pressing hard.
- Use light pressure. WÜSTHOF warns that excessive pressure can remove too much steel and compromise the edge; Work Sharp’s Whetstone User Guide likewise instructs users to use light pressure.
- Work both sides of the blade, then finish with light alternating strokes to remove the burr, as Work Sharp directs. Stop when the edge is restored rather than continuing to grind.
Stone and grit choices depend on the stone and the edge’s condition. As one example rather than a universal requirement, Work Sharp describes a 1000-grit face for sharpening and a 6000-grit face for refinement. WÜSTHOF’s own whetstone procedure uses its coarse side first, followed by its fine side.
Rinse and dry the knife
When you finish, rinse the knife and dry it immediately. WÜSTHOF specifies hot water for rinsing. If you used a honing steel for maintenance instead, WÜSTHOF advises washing the blade afterward to remove steel residue.

Choose a method that suits your knife and confidence
A whetstone offers a hands-on approach, while guided hand-held and electric sharpeners are alternatives described by WÜSTHOF. Follow the instructions for the particular tool and knife: WÜSTHOF warns that excess pressure with a handheld sharpener can remove too much steel. A honing steel is for routine alignment, not a substitute for sharpening when the edge needs to be reset.
If you are unsure about the correct angle or do not feel confident sharpening the knife yourself, professional sharpening is a reasonable option. Victorinox’s UK care page says its stores offer professional sharpening; check with your local store because the page does not establish that the service is available at every location.

Tools and examples in the maker guidance
WÜSTHOF’s sharpening collection lists a J 1000/3001 combination whetstone with a nonslip holder for sharpening and honing forged German kitchen knives. That is a product example, not a requirement or a tested recommendation. Likewise, Work Sharp’s 1000- and 6000-grit faces illustrate one sharpening-and-refinement setup; choose a tool and process that match your knife maker’s guidance.
