To keep a make-ahead salad crisp, wash and thoroughly dry the greens, refrigerate prepared ingredients promptly, and store wet, crunchy, and dressed components separately. Combine them just before serving. These steps help protect texture, but they do not guarantee a fixed number of days of freshness.
Wash produce safely before you prep
Wash your hands, utensils, and work surfaces first. Rinse fresh produce under running water; do not wash it with soap or detergent. If greens are labeled pre-washed or ready-to-eat, you can use them without washing again. If you choose to rinse them, handle them on clean surfaces and with clean utensils. USDA FSIS explains produce-washing guidance, including the advice for ready-to-eat greens.
Dry greens thoroughly
Water left on leaf surfaces can make stored greens wet and less appealing. Dry them well before packing. A salad spinner is one option, while a clean kitchen towel or paper towels can also remove surface moisture. The Academy of Nutrition and Dietetics lists a salad spinner as a way to remove excess water; it is a convenience, not a requirement.
Pack ingredients by moisture and texture
As a practical way to protect texture, store greens apart from juicy cut ingredients, dressing, and crunchy toppings such as croutons or nuts. Keep each component in a clean container and combine them close to mealtime. This is a sensible prep method, not a guarantee of a particular crispness or storage life.

Keep raw produce separate from raw meat, poultry, seafood, and the utensils or surfaces used for them. The FDA’s produce-safety guidance covers refrigeration and avoiding cross-contamination.
Refrigerate cut ingredients promptly
Put prepared perishable produce in the refrigerator rather than leaving it at room temperature. FDA advises keeping perishable fresh produce, including lettuce and herbs, in a clean refrigerator at 40°F or below. USDA FSIS advises refrigerating cut salad or fruit immediately for best quality and food safety. FDA produce guidance and USDA FSIS washing guidance provide these recommendations.

For perishable food generally, USDA FSIS says to refrigerate it within two hours—or within one hour when the temperature is above 90°F—and to keep the refrigerator at 40°F or below. These are food-safety boundaries, not a promise that salad will stay crisp for a set number of days.
