Preheat an empty stainless steel pan over low to medium heat, then check it with a few drops of water. When the drops bead and move across the surface, add oil; when the oil shimmers, add dry food. Give the food time to cook and release before turning it. The pan’s behavior is a better guide than a fixed timer because burners and pans heat differently.

How to preheat a stainless steel pan

  1. Warm the empty pan gradually. Set it over low to medium heat. All-Clad recommends one to two minutes as a starting point, while its care guide advises low to moderate heat; use the water test rather than treating that timing as universal.   2. Check with a few small drops of water. Moving, beading or “dancing” drops are the readiness cue in the cited manufacturer guidance. Drops that sit and evaporate slowly suggest the pan needs more time; drops that immediately steam or scatter can indicate excessive heat. This is a qualitative visual test, not a temperature measurement. Made In’s cookware care guide describes these water-drop cues.
  3. Add oil after the pan is hot. Add enough to cover the cooking surface. Let it heat until it shimmers or gives off faint vapor. If it smokes, lower the heat: Made In identifies smoking oil as a sign the pan is too hot. See Made In’s guide to cooking with stainless steel.
  4. Add dry food and let it cook. Where practical, bring ingredients closer to room temperature and pat them dry before adding them. Listen for a steady sizzle, avoid crowding the pan, and resist moving the food straight away. Turn it when it releases from the surface.

How to tell whether the pan is hot enough

Use the water test for the pan and the oil for a final check. Drops that bead and move indicate readiness in the cited manufacturer instructions; after adding oil, look for a shimmer or faint vapor before adding food. Neither cue gives an exact temperature, so adjust to what the pan is doing rather than relying on a precise number of minutes.

Why food sticks—and what to change

Sticking can result from an inadequately preheated pan, food that is cold or damp, too little oil, or trying to turn food before it is ready to release. If food sticks, let it cook longer before attempting to move it. Next time, check the preheat, dry the ingredients, use enough oil to coat the surface, and avoid crowding. Heat and safety cautions

  • More heat is not automatically better. Use low to moderate heat for ordinary cooking; All-Clad says high heat should be reserved for boiling.
  • Do not leave an empty pan unattended on a hot burner. All-Clad cautions against leaving it empty except while preheating.
  • If oil smokes, reduce the heat. Overheating can also leave brown or blue stains on stainless steel.
