Clean food residue from the oven cavity separately from descaling its steam system. Use the instructions for your exact make and model for both jobs: approved descaler, dose, program, rinses, and surface-care rules vary. Water hardness and steam use affect scale buildup, so there is no universal descaling schedule or recipe.
Cleaning the cavity and descaling the steam system are different jobs
A descaling program removes mineral deposits from parts of the steam or water system; it does not necessarily clean the cooking cavity. Wolf explicitly distinguishes descaling from interior cleaning in its convection steam oven guidance. Remove food soil using only the cavity-cleaning method and products allowed by your oven’s manual.
Find the correct instructions before starting
- Identify the exact make and model. Open its operating manual or the manufacturer’s support page for that model and region. A brand’s general support page may cover only selected appliances.
- Check preparation and safety requirements. Confirm whether the oven must be cool, whether racks or accessories should be removed, and whether the manual specifies gloves, a cloth, or a sponge.
- Confirm the descaler and dose. Use only the product the manual specifies or approves. Check compatibility and quantity before adding it to a tank, drawer, or evaporator dish.
- Read the full program and rinse sequence. Note whether the appliance needs fresh water, additional rinses, or manual cleanup after the cycle.
Descale the steam system using the model’s program
- Select the dedicated Descale or equivalent maintenance program if the manual calls for one.
- Prepare and load the solution exactly as directed. Do not borrow another model’s dilution, volume, or tank setup.
- Let the program finish and follow every display prompt. Some ovens require a fresh-water refill and a second rinse; others use a different sequence.
- Empty or wipe the tank, evaporator dish, or cavity only as the manual directs. For example, a BSH manual specifies removing liquid with a cleaning sponge and then wiping the cavity with a soft cloth; other models may differ.
Do not assume a descaling product is also suitable for cleaning the cavity. Keep it off controls and delicate surfaces unless the manufacturer’s instructions explicitly permit contact.
Clean the cooking cavity according to its surface-care rules
Use the oven manual’s permitted cleaners and tools for food soil. Where allowed, a non-abrasive sponge or cloth can help wipe loosened residue. Dry or ventilate the cavity if the manual instructs you to do so. Do not use a descaling program as a substitute for cavity cleaning.

Why manufacturer instructions differ
Official procedures are not interchangeable: brands differ in approved products, dose, appliance configuration, rinse count, and cleanup. These examples show why the exact model manual should govern the job.

Choose timing by the appliance reminder, water, and use
Water hardness and how often you use steam influence scale buildup. NEFF, Electrolux, Wolf, and Gorenje all identify hardness and/or usage as factors. Follow your oven’s reminder and manual rather than adopting a calendar interval from another brand. Wolf’s 6–18-month figure is only its typical guidance for its own convection steam ovens.

Do not substitute vinegar or another descaler without checking
Use only a descaler approved for the exact appliance. NEFF and BSH warn that other products may damage their appliances. Wolf specifically says not to use vinegar in its convection steam ovens because it may damage the unit and does not provide the protection of its recommended solution. That vinegar warning is Wolf-specific; check the manual rather than assuming the same rule applies to every brand.

Some descaling routines include more than one rinse and may leave liquid to remove from an evaporator dish. BSH states its sequence must be completed before the appliance is ready for use. Follow the display and manual to the end; do not skip rinses or improvise cleanup. If the appliance stops or shows an error, consult its model-specific troubleshooting instructions or manufacturer support rather than guessing at the next step.
