Search for the file extension or link type you want to change, select it, and choose an available app. You can also select an app on that page to review and change its supported associations.
Choose a default by file type or link type

Open Settings > Apps > Default apps.

Search for the extension or link type you want to change—for example,
.pdf—and select the matching result. -
Choose an available app for that type and confirm the selection if Windows prompts you.
The list of apps depends on what is installed and registered to handle the type. To see associations from the other direction, find and select an app on the Default apps page; Windows shows the file and link types it supports. Microsoft’s Default apps instructions describe both approaches.

Set a default PDF app
On the Default apps page, search for .pdf, select the result, and choose an available compatible app. Microsoft defines .pdf as the Portable Document Format extension in its reference to common Windows file extensions.
For a single file, you can instead use File Explorer: right-click the PDF, select Open with > Choose another app, and pick an installed app. Use the default-app setting when you want Windows to use your choice for that file type more generally.

Set an email app for mail links
Windows associates email behavior with specific file or link types, so change the relevant association rather than assuming one setting covers every email-related action. Microsoft’s Outlook example is to open Settings > Apps > Default apps, find Outlook under Set defaults for applications, choose a mail file or link type, select Outlook, and choose Set default. Microsoft’s Outlook instructions document this route for Outlook; it does not mean Outlook is the only possible mail app. Microsoft lists .eml as an email-file extension in its file-extension reference.
Set a default web browser
Microsoft’s documented example is to open Settings > Apps > Default apps, select Microsoft Edge, and choose Set default beside its default-browser setting. For another browser, use the app or link-type approach on the same page and select it if Windows lists it as available for the relevant types. See Microsoft’s instructions for changing default apps.

How to choose among the available apps
For this Windows setting, the practical first check is whether the app appears as an available choice for the file or link type you want to open. Windows’ association controls do not establish which PDF reader, email client, or browser is best for features, privacy, accessibility, speed, cost, or account integration; those require a separate comparison of the apps themselves.
