The Last Guardian is the clearest choice if you want a connection to the creative lineage behind Shadow of the Colossus. PlayStation describes it as coming from the creative mind behind Ico and Shadow of the Colossus, and its official pitch centers on the relationship between a boy and a mystical companion. Choose it for that companion-led atmosphere, not on the expectation of repeated giant-boss battles.

Titan Souls: for a compact boss-rush in 2D
Titan Souls narrows the focus to boss encounters, but changes the presentation substantially. Steam describes it as a difficult, single-player, top-down pixel-art boss-rush adventure. It may suit you if you want a run of memorable fights; it is not a 3D traversal game or a close visual match for Shadow of the Colossus.

Elden Ring: for a much larger fantasy world
Elden Ring is the broadest option, not a mechanical substitute. Consider it if you want a large fantasy action-RPG setting and demanding encounters rather than a game built around climbing colossi. Bandai Namco’s page for its expansion, Shadow of the Erdtree, describes a new world beyond the Lands Between and states that the expansion requires the base game. That expansion detail should not be mistaken for evidence that the series closely resembles Shadow of the Colossus.
