Neither is better for every kitchen. Choose enameled cast iron if you often cook with tomatoes, wine, or other acidic ingredients, make long simmers, or do not want to maintain seasoning. Choose bare, seasoned cast iron if you want a versatile surface for searing, roasting, baking, or outdoor cooking—and are willing to dry it promptly and care for its seasoning.
How the two cooking surfaces differ
Both types have a cast-iron body, but the cooking surfaces and their care are different. Enameled cast iron has a smooth porcelain coating bonded to the iron; it does not need seasoning. Bare cast iron relies on seasoning: a protective, easy-release layer of carbonized oil formed through polymerization. Lodge explains the distinction in its enameled cast-iron care guide and cast-iron product guide.
Which is better for the food you cook?

These are practical examples from manufacturer guidance, not exclusive uses or the result of a controlled comparison. Lodge recommends seasoned iron for tasks such as searing steaks, roasting vegetables, and making cornbread, and enamel for soups, chili, slow-cooked roasts, and sourdough in its product guide.
Can you cook acidic foods in bare cast iron?
Yes, in some circumstances; acidity is not a categorical ban. Lodge says a well-seasoned bare pan can handle short acidic cooking, but advises against leaving acidic ingredients in bare iron for more than about 45 minutes. That figure is Lodge’s general care guidance, not an independently measured threshold or a universal rule. For an all-day simmer or roast, Lodge recommends switching to enamel in its acidic-food guidance, published May 9, 2023.

What care does each type need?
Bare cast iron
- Dry the cookware promptly after washing to help prevent rust.
- Maintain its seasoning, which serves as a protective cooking surface.
- Expect seasoning maintenance to be part of owning and using the pan.
Lodge’s product guide describes care for bare cast iron. The seasoning is functional, not just a finish to preserve for appearance.
Enameled cast iron
- Heat it gradually and do not heat it empty on the stovetop; use oil or liquid as directed for your cookware.
- Use utensils that are less likely to scratch the surface. Lodge recommends wooden, silicone, or nylon utensils for its enamel cookware.
- Avoid sudden temperature changes and hard knocks. Le Creuset warns that dropping or striking its cookware against a hard surface may damage it.

Is one surface better at cooking overall?
The manufacturer guidance establishes differences in care and suitable uses, not a universal performance winner. It does not provide a controlled head-to-head test showing that one surface cooks better overall, so the choice is best made from your recipes and care habits rather than a blanket claim about heat performance.
