Dishcraft’s commercial dishwashing system automated scrubbing and visual inspection, not an entire kitchen’s dishwashing workflow. People still sorted and stacked the dishes, loaded carts, and moved racks to a commercial sanitizer. The company later shifted toward a centralized service that delivered reusable dishware, collected it after use, and washed it at a hub.
How Dishcraft’s robot washed dishes
The 2019 system was built around a specific sequence and custom dishware, rather than handling arbitrary plates from a restaurant’s existing inventory. Steel embedded in the bottom of each dish let the robot pick it up magnetically.
- People sorted and stacked the dishes. Staff prepared dishes in carts for the machine; TechCrunch reported that a system load could contain up to 90 dishes in its June 2019 launch coverage (TechCrunch).
- A robotic arm picked up dishes one at a time. Magnetic pickup worked with the steel built into Dishcraft’s custom dishware.
- A rotating scrubber cleaned each dish.
- Vision software checked the result. The dish rotated through 120 degrees while computer vision and machine learning inspected it. If food remained, the system sent it around for another cleaning pass.
- Clean dishes went into a standard rack. The rack still had to go through a commercial sanitizer.
IEEE Spectrum’s technical account describes this as automation of important repetitive stages, with people handling preparation and the downstream move to sanitation (IEEE Spectrum). It was therefore not a machine that independently collected dirty dishes, loaded itself, and completed every wash-and-sanitize step.
Which parts of dishwashing still needed people?
Workers remained part of the process at both ends of the machine. They pre-sorted and stacked the dishes, loaded carts, and transferred racks to the commercial sanitizer. The system also depended on compatible, custom steel-bottom dishware and a defined workflow.

That distinction matters for restaurant operators: automating scrubbing and inspection can reduce repetitive work, but it does not by itself eliminate dishroom staffing, cart handling, or the need to plan for sanitation. Dishcraft’s 2019 launch coverage described customized systems for kitchens and said pricing had not been publicly released (TechCrunch).
Why Dishcraft shifted to centralized dishwashing
By May 2020, Dishcraft was emphasizing a “dishes as a service” model instead of only selling an on-site machine. The company delivered clean reusable dishes and cutlery to a business, collected the used ware, and washed it at a centralized hub. CEO Linda Pouliot described the approach as “cloud dishwashing” in TechCrunch’s coverage (TechCrunch).

The centralized model changes the operator’s decision: rather than purchase and install a specialized system, a business would rely on delivery, pickup, and off-site washing. In a December 2021 interview, Pouliot said the service was intended to avoid large customer capital costs and on-site construction. She described target sectors including corporate cafeterias, foodservice providers, caterers, food delivery providers, hotels, and restaurants (Hotel Technology News).
What the historical numbers do—and don’t—show
The dated reports give a sense of the company’s plans and claims at the time, but they are not current operating data or independent performance results.

The same 2021 interview also attributed 22 inspections per item and 12 granted and 15 pending patents to the company. Those are interview-era company figures, not a current patent or system-status audit. TechCrunch reported $46 million in total venture funding in May 2020 (TechCrunch).
What a foodservice operator should compare
The available descriptions do not provide current prices or enough independently measured data to calculate which model is cheaper. An operator comparing an on-site system with centralized service should assess:

- Throughput: actual capacity during peak periods, not just a reported maximum.
- Workflow and ware: whether existing dishware is accepted or custom ware and staff procedures are required.
- Remaining labor: who sorts, stacks, loads, moves racks, and manages collection or delivery.
- Sanitation: what happens after robotic scrubbing and inspection, including the commercial sanitizer step described in the 2019 system.
- Service logistics: confirmed pickup radius, delivery schedule, and availability for the site.
- Resource claims: how water, energy, and labor comparisons were measured and whether the figures apply to the operator’s conditions.
Was Dishcraft a robot for home dishwashers?
No. The system described in the 2019 coverage was designed for commercial kitchens, and the later model was a business-to-business dishware delivery and washing service. In the 2021 interview, Pouliot gave no timeline for a consumer robot that loads and unloads a household dishwasher; she said she looked forward to a consumer company solving that problem (Hotel Technology News).
Is Dishcraft’s service available now?
The reports cited here document the system and business model from 2019 through 2021, not verified operations in 2026. Dishcraft’s LinkedIn profile describes Dishcraft Daily as a full-service delivery service, but that self-description does not establish current availability, customers, prices, or geographic coverage (Dishcraft on LinkedIn). An operator considering the service would need direct confirmation of those details.
