German sausage is not one style: it ranges from fresh regional Bratwurst for grilling to gently heated Bavarian Weisswurst, cooked blood and liver sausages, and fermented or smoked Rohwurst. The clearest way to understand the variety is to look at both how a sausage is made and where its regional traditions come from.

How German sausages are classified

German sausage names describe different things: some identify a production method, while others point to a regional recipe or serving tradition. The three broad processing categories are Brühwurst, Kochwurst, and Rohwurst. They help explain texture and preparation, but do not replace the instructions on a particular product’s package.

Brühwurst: heat-treated after filling

Brühwurst is made from finely comminuted meat, fat, salt, spices, and water or ice, then heat-treated after it is filled. The Bavarian food authority places Munich Weisswurst among the white Brühwurst varieties and notes that it is made with cooking salt rather than nitrite curing salt. Bratwurst and the sausage used in some versions of Currywurst are also associated with this broad class, though recipes and regional styles differ. Kochwurst: cooked preparations

Kochwurst includes sausages made from cooked ingredients or cooked as part of production. Blutwurst (blood sausage) and Leberwurst (liver sausage) are familiar examples. Their texture and intended use differ from a fresh sausage meant for grilling: Blutwurst is often served warm in regional dishes, while Leberwurst is commonly spread on bread.

Rohwurst: cured, fermented, dried, or cold-smoked

Rohwurst is a broad category of raw sausage that is salted and may be fermented, dried, or cold-smoked. Processing and maturation give these sausages a different character from heat-treated Brühwurst. Bratwurst and Weisswurst: the key differences

The contrast is useful when choosing what to cook: Bratwurst is commonly browned on a grill or in a pan, whereas Weisswurst is gently warmed so its casing is less likely to split. The Munich breakfast custom is a tradition, not a universal rule about when the sausage may be eaten. Michelin’s German sausage guide recommends heating Weisswurst in water just below a boil.

Regional sausages to know

Thüringer Rostbratwurst

This is a regional grilled Bratwurst from Thuringia. Michelin describes it as a protected geographical indication and reports a historical reference dating to 1404. The same 2019 article says at least 51% of ingredients must come from Thuringia; treat that as Michelin’s description, not a current legal compliance guide. For the binding standard, consult the current product specification rather than relying on a secondary food guide.

Blutwurst

Blutwurst is cooked blood sausage, with recipes and regional names that vary. One well-known warm preparation appears in the Cologne dish Himmel und Erde, served with apple sauce and mashed potatoes. GermanFoods’ Guide to German Hams and Sausages surveys the regional variations.

Frankfurter Würstchen

These lightly smoked sausages are cooked before packaging, according to Michelin, and are often reheated rather than cooked from raw. They are commonly served with mustard or horseradish, including in a bun. Follow the specific product’s package directions, which take precedence over general serving suggestions.

Leberwurst

Leberwurst is a spreadable liver sausage. Recipes and seasoning differ regionally; a familiar way to serve it is cold on bread, with mustard and pickles.

Bockwurst

Bockwurst is another named Würstchen variety. GermanFoods describes versions made from finely minced, spiced pork and beef and smoked. As with other regional products, the name alone does not establish the exact ingredients of every item sold under it.

Currywurst is a dish, not a single sausage type

Currywurst consists of sausage pieces with tomato-based curry sauce and curry powder, but the sausage base depends on regional style. EDEKA contrasts Berlin’s fried Brühwurst, served with or without casing, with the Ruhr area’s cooked, sliced Bratwurst. How many kinds of German sausage are there?

There is no settled official total in the reviewed sources. Michelin published an estimate of about 1,200 sausage types in 2019; GermanFoods gives an estimate close to 1,500, without a publication year stated on its page. These are differing estimates, not a verifiable census. Germany has a very large number of regional varieties, but a precise national count should not be presented as established.

Choose by how you want to serve it

  • For grilling or pan-cooking: choose a Bratwurst, checking the regional style and package directions.
  • For a gently warmed Bavarian-style meal: choose Weisswurst; serve with sweet mustard and pretzels if following the customary pairing.
  • For a sauced street-food-style dish: make Currywurst, specifying whether you want a Berlin-style Brühwurst or Ruhr-area Bratwurst approach.
  • For bread or a regional cooked dish: consider Leberwurst as a spread or Blutwurst served warm in a preparation such as Himmel und Erde.
