For a few mature green tomatoes, use a plain paper bag or a paper-lined counter. For a larger harvest, spread them in a shallow cardboard box lined with absorbent paper. Keep fruit out of direct sunlight, check it every few days, and remove any tomato that softens or decays. You do not need a special ripening gadget: the container mainly helps organize fruit, limit bruising, and make inspection easier.

Choose a container that fits your harvest

Start with mature-green tomatoes: full-sized, firm fruit without defects. Undersized or damaged green tomatoes are more likely to spoil and may not develop good flavor. A clean reused household container is usually enough.

Choose based on batch size, separation, absorbency, airflow, and how easily you can inspect the fruit—not on a brand or a claim that a special container is necessary. Cornell Cooperative Extension discusses a paper-lined surface and separation (Cornell, 2021); Iowa State, Nebraska, and Colorado describe box or wrapping methods in their guidance (Iowa State; Nebraska Extension; Colorado State Extension).

Set the pace with temperature, not sunlight

Tomatoes do not need direct sunlight to ripen indoors. Keep them out of direct sun; choose a warmer spot for faster ripening or a cooler one for slower storage. Recommendations vary by method and goal, so treat published ranges as guidance rather than a single exact setting for every home.

Colorado State Extension says indoor-ripened tomatoes will not develop flavor as fully as vine-ripened fruit, and Iowa State notes they may be less flavorful. Think of indoor ripening as a way to salvage mature fruit and extend its use, not improve its flavor.

Reduce the chance of rot

Containers do not precisely control humidity. Too much moisture can encourage mold or rot; very dry conditions can cause tomatoes to shrivel. Use a dry spot with air circulation, absorbent lining, and enough space to inspect fruit. Check every few days—or more often in a bag—and promptly remove any tomato that becomes soft or begins to decay. Avoid crowding and bruising, which make it harder to spot trouble early.

Use ethylene only if you want faster ripening

Ripening tomatoes naturally release ethylene. For an optional speed-up, place a ripe tomato, apple, or banana with green tomatoes, especially in an enclosed bag. To slow the rest, remove ripe or coloring fruit from the group. Green tomatoes can ripen without an added fruit; this is a timing choice, not a requirement.

What to gather before a frost

When frost is imminent, harvest mature-green tomatoes rather than leaving them exposed. Choose firm, full-sized, unblemished fruit, then sort it into bags or a shallow lined box according to how much you have. Iowa State University Extension and Outreach advises that mature green tomatoes can be harvested and ripened indoors (FAQ, updated 2024-08-02).
