Use fresh fish within two days of purchase if it is kept in a clean refrigerator at 40°F (4°C) or colder. If you will not cook it within that time, wrap it tightly and freeze it at 0°F (-18°C) or colder. Chill it promptly, and use a thermometer to verify that your appliances are cold enough.
How long can you store fish?
The simplest household rule is based on when you plan to cook it: refrigerate fish for use within two days after purchase, or freeze it for longer storage. The FDA advises putting seafood on ice or in the refrigerator or freezer soon after buying it. Keep raw fish covered and positioned so its juices cannot drip onto ready-to-eat foods.
Do not leave fish or other perishable food at room temperature for more than two hours, or more than one hour if the surrounding temperature is above 90°F (32°C). These limits apply to time out of refrigeration, including serving or transport. See the USDA FSIS food-safety basics.
Should I freeze fresh fish if I won’t cook it in two days?
Yes. Wrap the fish tightly in plastic, foil, or moisture-proof paper and put it in a freezer set to 0°F (-18°C) or below. Freeze it while it is still in good condition: freezing preserves the fish’s condition at that point; it does not restore freshness that has already declined. Freezer time recommendations are primarily about quality, not a deadline after which continuously frozen fish suddenly becomes unsafe. FoodSafety.gov says food kept continuously at 0°F or below can be stored indefinitely from a safety perspective; its chart provides shorter periods for best quality. The chart was last reviewed September 19, 2023.

What temperature should my fridge be for fish?
Keep the refrigerator at or below 40°F (4°C) and the freezer at or below 0°F (-18°C). Check the actual temperature with an appliance thermometer rather than relying only on the dial setting; FDA explains refrigerator thermometer use in Refrigerator Thermometers: Cold Facts about Food Safety.
How to thaw frozen fish safely
- For the easiest method: Thaw fish overnight in the refrigerator, in a container that catches any liquid.
- For faster thawing: Seal the fish in a plastic bag and immerse it in cold water. Once thawed, cook it promptly.
- If using a microwave: Defrost only when you will cook the fish immediately afterward. Stop while it is still icy but pliable.
Do not thaw fish on the counter or in another room-temperature place. These methods follow the USDA FSIS safe-defrosting guidance.

Can you refreeze thawed fish?
Fish thawed in the refrigerator can be refrozen without cooking it first, according to USDA FSIS. Its quality may decline because thawing and refreezing can cause moisture loss. That advice does not establish that fish left out at room temperature or otherwise kept warm is safe to refreeze. See Freezing and Food Safety.

- Keep raw fish and its drips away from ready-to-eat food, including in the refrigerator.
- Wash your hands after handling raw seafood.
- Wash boards, utensils, dishes, and countertops between raw fish preparation and contact with ready-to-eat food.
- Discard seafood with a sour, rancid, fishy, or ammonia odor. An odor is a warning to discard fish, not a way to certify that fish without those odors is safe.
