Why corn pudding turns watery
Water carried into the batter by thawed frozen corn, canned corn, or freshly cooked kernels can thin the mixture. Bon Appétit’s corn pudding recipe specifically instructs cooks to drain excess moisture from thawed frozen or cooked fresh corn before mixing it into the batter: “Be sure to drain off any excess moisture before adding it to the batter.”
Drain the corn before mixing
- Thawed frozen corn: drain away liquid after thawing.
- Canned corn: drain it before adding it to the recipe.
- Fresh cooked corn: remove excess moisture before mixing the kernels into the batter.
Do not assume extra baking will fix a batter thinned by excess liquid. Start by controlling the moisture in the corn.
Choose a recipe that matches the texture you want
Corn pudding ranges from a spoonable savory custard to a firmer, cornbread-like casserole. The recipe’s eggs and starch help it set, but recipes use different combinations and amounts, so adding a large quantity of extra starch without a recipe basis can make the result heavy.

When a water bath makes sense
For a custard-style version, a water bath is an established method: the USDA’s historical recipe places the dish in a pan of hot water and bakes it until the center is set.
