What makes Steak au Poivre pepper-forward?
In the cited au Poivre recipes, cracked black pepper is a central part of the preparation, not merely a seasoning added at the end. Alton Brown’s recipe calls for whole peppercorns, coarsely crushed and pressed onto both sides of tenderloin fillets before searing. McCormick for Chefs likewise uses cracked black pepper on New York strip.
Brown lists a mortar and pestle, the bottom of a cast-iron skillet, or a mallet and pie pan as ways to crush the peppercorns. James Beard’s archived recipe suggests a rolling pin, meat pounder, or a brief pulse in a blender. The James Beard Foundation archive quotes Beard: “The pepper must be freshly cracked or ground to provide proper flavor.”

How Steak Diane’s sauce and aromatics differ
The Lake Buena Vista Club recipe published by Disney Parks Blog is a useful example of the Diane style. It pairs New York strip with brandy, mushrooms, garlic, onion, and a Burgundy sauce. The sauce includes Burgundy wine, beef stock, tomato, aromatics, and thickening ingredients.
The method uses the steak pan to build the dish: after searing the steaks, the cook flambés the brandy, removes the meat, sautés the aromatics in the same skillet, adds Burgundy sauce, then returns the steaks to simmer briefly. The recipe serves four and calls for four six-ounce steaks. Disney dates the article to December 23, 2010, and says the Lake Buena Vista Club operated from 1974 to 1994.

Why flambé does not distinguish the dishes
Flambé appears in the cited Diane recipe, but it is not exclusive to Diane. James Beard’s Steak au Poivre Flambé also uses Cognac and freshly cracked peppercorns. To tell the styles apart, look first for a pepper crust, then consider the sauce and aromatics—not whether alcohol is set alight.

- Choose au Poivre if you want a pronounced cracked-pepper character and a Cognac-based sauce. The cited examples vary: one combines Cognac with heavy cream, while another uses beef stock and crème fraîche.
- Choose Diane if the appeal is a pan sauce with mushrooms and other aromatics, as in the Lake Buena Vista Club version with Burgundy sauce.
Neither steak cut nor flambé technique is a universal dividing line: the cited Diane and one au Poivre recipe use New York strip, and both styles appear in flambéed versions.
