Keep perishable items chilled until serving, and don’t assume that “lactose-free,” “gluten-free,” or “pasteurized” automatically makes a food suitable for everyone.
Start by asking what each guest can eat
Before shopping, ask guests to name their specific restriction and what precautions they need. A preference, lactose intolerance, milk allergy, and celiac disease are different planning constraints; a single “dietary-friendly” label does not address them all. If someone has an allergy, ask whether they need protection from cross-contact as well as ingredients that contain the allergen.
For packaged foods in the United States, read the full ingredient list and allergen information. FDA recognizes nine major food allergens: milk, egg, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame. A “may contain” statement is voluntary, so its absence does not prove cross-contact is impossible. See the FDA’s guidance on reading food labels for allergies and its food-allergen guidance.
Keep original packages or ingredient information available so guests can check for themselves. Don’t call the whole board “allergy-safe” unless the ingredients and preparation have been checked against the particular guest’s needs.

Choose a small range of cheeses with contrasting character
There is no fixed formula required for a good board. A practical starting point is one familiar, mild cheese, one firmer or aged cheese, and one soft or more assertive option. For example, you might pair a mild cheddar with a firm Parmesan and a soft Brie, then adjust the selection to the guests’ preferences and restrictions. This is a way to create contrast, not a guarantee that any cheese suits a particular diet.
Consider texture and flavor separately: soft, semi-firm, and firm cheeses offer different bites, while mild and bold choices give guests a range of intensity. Check the milk type and pasteurization information when relevant, and verify that each selection fits the guest’s stated needs. Do not treat goat or sheep cheese as safe for someone with a milk allergy: FDA’s allergen guidance includes milk from goats, sheep, and other ruminants.

Choose the amount according to appetite, whether the board is a snack or part of a meal, and what else you are serving. Rather than relying on a universal quantity, scale the number and size of selections to your gathering.
Match the accompaniments to actual restrictions
For a milk allergy
Lactose-free dairy is still dairy and is not a substitute for avoiding milk proteins. Plant-based cheese may be an option, but check its ingredients: FDA notes that plant-based alternatives vary in composition and may contain common allergens such as tree nuts, soy, or sesame. Read the product label and confirm the choice with the guest rather than relying on the product category alone. FDA information on plant-based alternatives explains that these products vary.

For gluten avoidance or celiac disease
Check crackers, bread, packaged spreads, and other processed accompaniments, not just the cheese. In the United States, FDA-regulated “gluten-free” labeling includes a limit of less than 20 parts per million (ppm) of gluten, along with other requirements. Read the package and ask the guest what precautions they need. If strict avoidance is required, keep wheat crackers and their serving utensil separate from foods intended for that guest. For other allergies or preferences
Apply the same label check to packaged dips, preserves, nuts, dried fruit, and crackers. Nuts, sesame, soy, wheat, and other allergens can appear in accompaniments or their ingredients. When you cannot verify a product or preparation method, ask the guest before including it or leave it off.

Plan pregnancy-conscious cheese choices
For guests who are pregnant, U.S. federal guidance advises avoiding all raw-milk cheeses and unheated queso fresco-type cheeses, including those made with pasteurized milk. Safer-choice examples include pasteurized hard cheeses such as cheddar, Parmesan, and Swiss, Gruyere, or Emmental, as well as pasteurized cottage cheese, cream cheese, string cheese, feta, and mozzarella. Check the package for pasteurization and follow the guest’s own clinician or local health authority if their advice differs. See FoodSafety.gov’s guidance for pregnant women.
Queso fresco-type cheeses are fresh, high-moisture cheeses that can support Listeria; pasteurization does not prevent contamination that may occur afterward. FDA advises people at increased risk to avoid all queso fresco-type cheeses. If cooking such cheese in a dish, FDA says to heat it to an internal temperature of at least 165°F (74°C); this is cooking guidance, not a reason to serve the cheese unheated on a board. Set up the board to make choices clear
Arrange cheeses with space between them and identify them clearly, especially when guests need to distinguish a restricted ingredient or a specific cheese type. Put accompaniments in separate areas or small dishes, and use separate serving utensils where that helps prevent mix-ups. A dedicated clean serving board can be useful, but it is optional: a clean platter or slab works too. Mayo Clinic Health System advises using a serving board for serving rather than also using it for cutting or other food preparation; see its charcuterie-board food-safety advice.
Keep cheese safely chilled
Keep perishable cheese refrigerated until serving, and avoid leaving it out longer than needed. FDA advises keeping queso fresco-type cheese at or below 40°F (4°C). If it has been in the 40°F–140°F (4°C–60°C) danger zone for more than two hours, discard it. FDA’s entertaining food-safety guidance also advises refrigerating cheese chunks and other perishables until serving. When serving guests at increased risk, follow the more specific guidance for the foods they should avoid, not just general chilling practices.
