Follow the sanitizer’s current label for dilution, contact time, and rinsing. When filling, avoid splashing: oxygen can cause stale, wet-cardboard-like flavors even when contamination is not the problem.
Clean first, then sanitize
Cleaning and sanitizing do different jobs. Cleaning removes beer residue and other visible soil; sanitizing reduces microorganisms on a clean surface. Sanitizer cannot reliably do its job through leftover deposits, so a bottle that looks dirty needs more cleaning, not just another pass with sanitizer. The Clemson University Extension guide to cleaning and sanitation and the American Homebrewers Association (AHA) equipment guide both emphasize this distinction.
Use this bottle-to-bottling workflow
1. Rinse bottles promptly after use
As soon as practical after pouring, rinse out the dregs rather than leaving them to dry. Dried residue is harder to remove and can make later cleaning more difficult. The AHA’s bottling guidance recommends prompt rinsing as a way to keep bottles manageable for reuse.
2. Inspect and clean before sanitizing
Before bottling, check each bottle for visible residue or deposits. Wash until the bottle is clean; use a bottle brush if sediment remains. For dried or stubborn deposits, use a brewing cleaner according to its label and rinse as directed. A brush removes soil; it does not replace sanitizer.

3. Sanitize clean bottles according to the product label
Choose a sanitizer suitable for brewing equipment and follow its current label for dilution, contact time, and whether rinsing is required. The AHA identifies Iodophor and Star San as homebrew sanitizer options. Its bottling article describes using properly diluted Star San to wet bottle interiors and hanging bottles on a bottle tree to drain. Those examples are not a universal recipe: do not transfer a concentration or contact time from another product, or rely on an older article instead of the current label.
Bleach is another option discussed in AHA equipment guidance, but it must be used at the proper dilution and thoroughly rinsed. Chlorine residue can affect beer flavor, and rinse water can introduce contamination if handled poorly. Follow reliable brewing guidance and the product label rather than improvising a bleach mixture.

4. Protect bottles until filling
After sanitizing, avoid touching the inside of the bottle or letting it contact an unclean surface. Keep bottles protected and minimize the time between sanitizing and beer contact; Clemson Extension advises minimizing that interval. If a bottle interior is touched or otherwise exposed to a likely source of contamination, sanitize it again before filling.
5. Fill gently and use a suitable closure
Keep splashing to a minimum while transferring beer into bottles. Oxygen pickup during racking or bottling can accelerate aging and cause wet-cardboard-like character; this oxidation pathway is separate from microbial contamination. The AHA explains this risk in its homebrew quality-technique guidance. Use bottles whose closures can seal effectively: the AHA notes that twist-off bottles are difficult to seal airtight.

Avoid flavor problems from cleaning products
Fragrance can linger, so the AHA equipment guide recommends avoiding scented cleaning products. Also make sure any cleaner is used and rinsed as its label directs. Cleaner residue can create a flavor problem of its own; sanitizing does not remove the need to rinse a cleaner when rinsing is required.
Recognize possible contamination clues without overdiagnosing
Cloudiness, sourness, unusual texture, off-aromas or flavors, surface films, unexpected over-carbonation, and gushers can be associated with contamination. Some unwanted microbes can consume sugars and produce extra carbon dioxide, which may contribute to gushers. These signs are clues, not proof that a particular bottle was the source—or that contamination is definitely the cause. Clemson Extension lists several of these effects, and the AHA discusses excess CO2 from contaminants. Consider the whole brewing and packaging process rather than diagnosing from one sensory sign.

Separate contamination from oxidation
Not every off-flavor points to a dirty or contaminated bottle. A stale, wet-cardboard-like character can result from oxygen exposure during transfer or bottling. In that case, focus on reducing splashing and oxygen pickup; repeating a bottle-cleaning step alone may not address the cause. Conversely, careful filling does not compensate for a bottle that still has residue or was not sanitized after cleaning.
