What bitterness and sourness can tell you
Bitterness is not automatically a flaw: it can be a pleasant part of coffee’s character or an unpleasant note. The Specialty Coffee Association (SCA) identifies several possible influences, including roast, coffee species, harvest maturity, beverage concentration, and holding time. Roast is one significant source; darker roasting can create bitter-tasting compounds.
Sourness is harder to diagnose by taste alone. In the SCA’s summary of controlled drip-brew experiments, the most sour coffees had high total dissolved solids (TDS) and low extraction percentage (PE). That result describes tested drip coffee, not a universal rule for every brewing method or coffee.
Strength and extraction are different
TDS measures how concentrated the brewed beverage is. PE measures the proportion of soluble material extracted from the grounds. A cup can be strong without having extracted a large proportion of the grounds’ solubles; strength alone does not prove that extraction is complete.

The SCA summary reports a consumer preference evaluation involving 119 black-coffee consumers and 744 individual drip brews measured for pH and titratable acidity. In the reported experiments, the tested TDS levels were 1.0%, 1.25%, and 1.5%, and the tested PE levels were 16%, 20%, and 24%. These were study conditions, not a universal recipe or target for home brewing. See the SCA summary of the sourness research.
How to troubleshoot a bitter cup
- Check the roast. If the beans are dark-roasted and the bitterness seems intrinsic to their flavor, try a different roast profile rather than treating it as a brewing fault.
- Consider concentration. The SCA identifies brew concentration as one possible influence on bitterness. If the cup is unusually concentrated, change your recipe in a measured way and taste the result.
- Notice how long brewed coffee has been held. Coffee held over time can develop bitter flavors. If bitterness increases after brewing, compare a fresh cup with one that has been sitting.
- Change one brewing variable per attempt. Depending on the method, grind size, dose, and contact time can affect the cup. Keep the other settings steady so you can tell whether the change helped.
If you cannot make repeatable grind-size adjustments, a grinder that allows consistent changes may help with dialing in a recipe; buying one is not necessary if your current setup gives you enough control.

How to troubleshoot a sour cup
Do not assume sourness automatically means the water was too cool or the grind was too coarse. The SCA’s drip experiments found the greatest sourness in brews with high TDS and low PE, and the least sourness in those with low TDS and high PE. This is a useful clue for drip brewing, not a diagnosis that applies to every cup.
- Keep your brewing method and recipe in view; note the coffee dose, grind, and brew or contact time.
- Choose one variable—grind size, dose, or contact time—to adjust, using changes that make sense for your brewing method.
- Brew again while holding the other variables steady, then compare the cup. If you changed several things at once, you will not know which change affected the taste.
Temperature can affect how quickly extraction happens, but it is not a standalone explanation for sourness. In an SCA interview, UC Davis professor William Ristenpart said: “If those metrics are the same in two different brews, it doesn’t matter what brew temperatures were used to achieve them because tasters can’t differentiate them: they taste the same.” The reported comparison concerned hot drip coffee made with a representative wet-processed Arabica, at 87°C, 90°C, and 93°C; it does not establish that temperature never matters in ordinary brewing. What if the coffee tastes both bitter and sour?
There is no single diagnosis established here for that combination across brewing methods. Roast and concentration can influence bitterness, while the controlled drip findings link sourness with high TDS and low PE. Check whether your brewing is consistent, then change one variable at a time rather than making several corrections based on the two tastes alone.

- Decide whether the roast is the mismatch. If the bitterness seems to come from the roast profile itself, try beans roasted differently.
- Identify your brewing method and keep its recipe consistent. The SCA findings summarized here concern controlled drip coffee; they should not be treated as a direct formula for espresso, immersion, cold brew, or every other method.
- Think about strength separately from extraction. Do not treat a stronger cup as proof that more of the grounds’ solubles were extracted.
- Adjust only a variable you can control consistently. If grind changes are not repeatable with your setup, changing grind size may make it harder to interpret the result.
