How a gravity assist works
As a spacecraft passes a planet or moon, the body’s gravity bends its trajectory. In an idealized two-body description of the encounter, the spacecraft speeds up as it falls toward the body and slows as it climbs away. It leaves with the same speed relative to that body as it had on approach, but traveling in a different direction.
The crucial point is that the planet or moon is itself moving around the Sun or another central body. Changing the spacecraft’s direction relative to the flyby body therefore changes its velocity relative to the Sun. The spacecraft and the moving body exchange momentum; the body’s corresponding motion change is real but extremely small because of its much greater mass. A flyby can redirect a spacecraft, raise or lower its orbital energy, or change its orbital inclination. It is not inherently an acceleration.
For example, a flyby from behind a planet’s direction of orbital motion can transfer some of the planet’s orbital momentum to the spacecraft. Passing in front of the planet’s motion can transfer momentum the other way and reduce the spacecraft’s energy.

How a rocket engine burn works
A rocket engine produces thrust by expelling reaction mass, accelerating the spacecraft in the opposite direction. It carries its own oxidizer, so it can operate in space without atmospheric oxygen. A burn directly changes the spacecraft’s velocity; mission planners specify the required change in velocity (delta-v), its timing, and the spacecraft’s attitude, then use the propulsion system to produce it.
A rocket’s available delta-v is constrained by its engine performance and propellant. For an ideal rocket, it depends on exhaust velocity and the ratio of the spacecraft’s initial mass to its final mass. More propellant is not a free way to add capability: the spacecraft must also carry that propellant, and the propulsion system must be able to use it.

Why reference frames make gravity assists confusing
“Speed” needs a frame of reference. In the idealized flyby description, the spacecraft’s incoming and outgoing speeds relative to the planet or moon are equal, even though its direction changes. Relative to the Sun, its velocity—and therefore its speed or orbital energy—can change because the flyby body is moving. A rocket burn, by contrast, changes the spacecraft’s velocity through thrust, whether or not it is near a planet.
NASA’s Cassini gravity-assist explanation describes the maneuver as involving three bodies: the spacecraft, the body providing the assist, and the central body around which the spacecraft’s path is being controlled. Thinking about all three helps explain why a spacecraft can gain energy without violating conservation of energy: the moving planet or moon supplies a minute share of its orbital momentum and energy.

Gravity assist vs. rocket burn

How missions combine the two methods
Cassini: rocket braking, then Titan flybys
Cassini’s launch vehicle could not send the nearly 6,000-kilogram (13,200-pound) spacecraft directly to Saturn. Gravity assists helped it reach the planet. Once there, Cassini used its main onboard rocket engine to brake for Saturn orbit capture; later trajectory steering relied heavily on planned flybys of Titan. NASA describes a typical close Titan flyby as changing Cassini’s speed by around 800 m/s relative to Saturn, while the change was zero relative to Titan in its two-body description. Those figures differ because they use different reference frames.
In a 2012 account, NASA’s Jet Propulsion Laboratory said eight Titan assists provided 15,000 mph (6.6 km/s) of accumulated vector delta-v, which helped raise Cassini’s orbital inclination to 62 degrees. It compared this with roughly 2,700 mph (1.2 km/s) of post-capture rocket-engine delta-v capability. These are mission-specific accumulated vector changes across different durations—not a universal comparison of speed gained, efficiency, or maneuver quality. OSIRIS-REx: a burn followed by an Earth assist
OSIRIS-REx used both techniques on its route to asteroid Bennu. NASA reports that the spacecraft’s Dec. 28, 2016 deep-space maneuver changed its velocity by 431 m/s (964 mph) using 354 kg (780 pounds) of fuel. The burn set up a later Earth gravity assist. The figures describe that specific maneuver, not a general amount of propellant or delta-v for other missions. See NASA’s report on the OSIRIS-REx maneuver.

Neither is universally better. A gravity assist can provide a useful trajectory change without using propellant for the flyby itself, but it only works when a suitable body, route, geometry, and encounter time are available. A burn gives mission planners more direct control over when and in what direction to change velocity, but it is limited by the spacecraft’s propulsion system and carried propellant. Mission designers choose a route and propulsion plan around the destination, timing, and spacecraft capabilities—and often combine assists and burns.
