After pickup, food scraps go to a transfer station or processing facility, where workers or equipment may remove contaminants before the material is biologically processed. Depending on the local program, that means aerobic composting, anaerobic digestion, or a combination of the two. Some systems turn the remaining material into finished compost for agriculture, landscaping, community use, or sale—but not every item in the collection becomes compost.

What happens to food scraps after collection?

The route varies by city and hauler, but the typical sequence is collection, delivery to a facility, contaminant removal, biological processing, and eventual use of the finished material. Toronto, for example, documents a route from dedicated collection trucks or separate truck compartments to a transfer station and processing facility. Other programs may use different transport arrangements.

  1. Collection and transport: A truck takes the scraps to a transfer station or processing facility. The collection system may be dedicated to organics or use a separate compartment.
  2. Preprocessing: The facility unloads and prepares the material. Plastic bags and other non-organic items may be removed and sent to landfill.
  3. Biological processing: Microorganisms break down the organic material, using oxygen in composting systems or without oxygen in anaerobic digesters.
  4. Curing and screening: Compost may be screened, left to mature, sampled, and tested against local quality requirements.
  5. End use: Finished compost may be sold or used in agriculture, landscaping, road projects, community gardens, or resident distribution programs.

These steps do not mean every collected scrap becomes finished compost. Facilities discard contaminants, and some programs produce biogas and digestate as part of the process.

How do composting and anaerobic digestion differ?

Aerobic composting

Aerobic composting uses oxygen to support microorganisms that break down organic material. The method differs by facility. Chicago describes mixing food scraps with yard waste in long windrows; Calgary describes shredded feedstock processed in aerated in-vessel equipment.

Anaerobic digestion

Anaerobic digestion breaks down organic material without oxygen. It produces biogas and digestate. In Toronto’s system, the digestate is then composted outdoors, so digestion is one stage rather than the final step.

Hybrid processing

A local program can combine methods, such as digestion followed by composting. Do not assume that every pickup service uses digesters, produces renewable natural gas, or follows the same route; check the municipality or hauler’s process description.

How long does processing take?

There is no single processing duration that applies everywhere. The published examples below describe different facilities and stages, so they are not directly comparable guarantees.

The differences reflect distinct equipment, feedstocks, and definitions of when processing starts and ends. The cited official pages do not provide a directly comparable figure for the share of pickup material that becomes saleable finished compost.

What happens to bags and other contaminants?

Contamination rules depend on the local program. Toronto says plastic bags and other contaminants are removed before processing and sent to landfill. Calgary describes screening out plastic, metal, and large objects after vessel processing, with those materials also sent to landfill. Screening reduces contamination; it does not make mistakenly added items disappear.

Bag rules can differ even between programs that collect food scraps. Chicago’s food-scrap drop-off program does not accept bags, including certified compostable bags. Austin Resource Recovery cautions that “What is and is not acceptable for composting may vary by hauler, location and process.” Check your own hauler’s accepted-material list before using a liner or putting packaging in the bin.

What happens to the finished compost?

When a facility produces compost, it may screen, cure, sample, and test it against local criteria. Calgary reports laboratory analysis for its Category A compost, while Toronto says its finished compost is tested against Ontario Compost Quality Standards.

After processing and any required testing, compost can be used as a soil amendment. Depending on the program, it may go to agriculture, landscaping, road projects, community gardens, or residents; it may also be sold in bulk. The destination is local, not a guaranteed benefit of every pickup service.

How to check what your local pickup accepts

Before using a compost pickup service, check its official instructions for the details that determine whether an item can follow the intended route:

  • Which food scraps and paper products are accepted.
  • Whether loose scraps, paper liners, or certified compostable bags are allowed.
  • Whether the program uses aerobic composting, anaerobic digestion, or a combination.
  • Whether the provider publishes a processing timeline and which stages it covers.
  • How the finished compost is tested and where it is used.

Acceptance can vary by hauler, location, and process. In particular, do not assume meat, seafood, dairy, bones, or compostable packaging are accepted everywhere. For local collection options, use your municipality’s service information or hauler lookup rather than assuming a pickup service operates in your area.
