To change whether the Windows 11 touch keyboard inserts a period after two quick taps of the Spacebar, open Settings > Time & language > Typing > Touch keyboard and turn Add a period after I double-tap the Spacebar on or off.

Switch Add a period after I double-tap the Spacebar on to enable the feature, or off to disable it.
The exact setting name and location are listed in Microsoft’s Windows Backup Settings Catalog.

Turn the option on if you want two quick Spacebar taps on the touch keyboard to add a period. Turn it off if you do not want that shortcut. The choice does not require installing or buying anything.
Do not confuse it with SwiftKey’s quick period
