Pasta with peas, herbs, ricotta and lemon works best when the ricotta is loosened with hot, starchy pasta water until it coats the noodles. How the ricotta sauce comes together

Zest the lemon before juicing it. Zest brings fragrant citrus character; juice adds acidity, so add it gradually and taste as you go. The closest matching lemon-ricotta example uses both zest and juice, but the balance is a matter of preference.

Peas
Fresh or frozen peas both suit the combination. One related recipe suggests adding blanched peas shortly before draining the pasta, while another pairs peas with ricotta in a baked dish. For this preparation, add peas late enough to warm them without making them softer than you want. The exact timing depends on whether they are fresh, frozen, or already cooked.
Herbs
Basil is a natural option, and parsley also works; a mixture can give the dish a less basil-led finish. Fold herbs in near the end so their fresh character remains prominent. The title does not specify a single required herb blend.

Choose a pasta shape that holds the sauce
Long pasta such as spaghetti or bucatini works well with a coating sauce. Short shapes such as rigatoni or penne are another option and can catch peas and ricotta in their ridges or openings. Ways to tailor the dish

- More distinct peas: warm tender peas briefly and fold them in near the end; for a softer, more integrated result, let them spend longer with the hot pasta.
- Different texture: choose long strands for a more continuous coating or a short shape that catches individual peas.
