Refrigerate pesto promptly at 40°F (4°C) or colder, and freeze portions you will not use soon. Do not rely on oil, a layer of oil, or the presence of garlic and herbs to preserve pesto at room temperature. FoodSafety.gov does not give a pesto-specific refrigerator shelf life, so there is no supported universal number of days for homemade or opened pesto as a standalone condiment.
How to refrigerate pesto safely
- Put it in a clean, covered container. Refrigerate pesto promptly rather than leaving it on the counter.
- Keep the refrigerator at 40°F (4°C) or below. This is FoodSafety.gov’s cold-storage target: Cold Food Storage Chart.
- Follow the time limit for food left out. FoodSafety.gov advises refrigerating perishable food within two hours, or within one hour when the surrounding temperature is above 90°F (32°C). Discard pesto left out longer than the applicable limit; chilling it afterward does not undo the time spent unrefrigerated. See 4 Steps to Food Safety.
The reviewed official guidance does not establish how many days homemade or opened pesto lasts in the refrigerator. FoodSafety.gov’s advice to use cooked leftovers within four days is general leftover guidance, not a pesto-specific shelf-life determination; do not treat it as a guaranteed storage period for pesto kept as a condiment.
How to freeze leftover pesto
Freeze pesto if you will not use it soon. Set the freezer to 0°F (-18°C) or below, FoodSafety.gov’s recommended temperature. Divide pesto into small portions or small freezer-safe containers so you can thaw only what you need. An ice cube tray is one optional way to portion it: University of Minnesota Extension describes freezing basil mixed with oil in a tray, but a tray is not required.
- Prepare a portion for freezing. University of Minnesota Extension recommends leaving cheese out of pesto intended for freezing. This is recipe guidance, not a universal food-safety requirement; if cheese is already mixed in, the guidance does not establish a separate safety deadline or prove that the pesto cannot be frozen. - Pack portions in freezer-safe containers. Leave enough room for the container’s contents to expand if needed, and cover or seal the portions.
- Freeze promptly at 0°F (-18°C) or below. Keep the portions frozen until you are ready to use them.
- Thaw only the portion you need. Thaw it in the refrigerator, or add a frozen portion directly to a dish being cooked. Avoid leaving pesto to thaw on the counter.
FoodSafety.gov says food kept continuously frozen at 0°F (-18°C) or below can be stored indefinitely from a safety standpoint, although quality declines over time. Its freezer intervals are quality guidance, not a date after which continuously frozen food automatically becomes unsafe.

Why garlic and oil do not make pesto shelf-stable
Do not store homemade garlic-and-herb mixtures in oil at room temperature or assume a surface layer of oil preserves them. University of Minnesota Extension explains that oil creates a low-oxygen environment; low-acid ingredients such as garlic, herbs, or peppers in oil at room temperature can support Clostridium botulinum growth and toxin production. Keep these mixtures refrigerated and follow tested food-preservation instructions. This is conservative advice for oil-based mixtures, not a claim that every pesto recipe has been laboratory-tested. If pesto is part of a cooked dish
Once pesto is incorporated into a cooked dish, use the general guidance for cooked leftovers: refrigerate promptly, use within four days, and reheat leftovers to 165°F (74°C) when reheating applies. These are general leftover recommendations, not a pesto-condiment shelf-life rule.
