Put seasoned cut pineapple in a clean, covered food-storage container and refrigerate it promptly at 40°F (4°C) or below. Chili and lime are for flavor, not preservation: lime juice does not sanitize the fruit or make it safe to leave at room temperature.
How to store it safely
- Refrigerate it promptly. USDA Food Safety and Inspection Service (FSIS) advises: “Immediately refrigerate any cut items such as salad or cut fruit for best quality and food safety.” Place the pineapple in the refrigerator after serving or preparation rather than leaving it on the counter. - Use a clean, covered container. A lidded food-storage container helps retain moisture and keeps the fruit from picking up odors from other foods. Covering is useful, but the container does not replace refrigeration. USDA FSIS refrigeration guidance

How long does cut pineapple with lime last in the fridge?
Federal cold-storage guidance does not give a specific storage duration for homemade cut pineapple dressed with chili and lime. Shelf life can vary with the fruit, refrigerator temperature, preparation, and packaging; USDA’s fresh-cut fruit resource describes those factors but does not establish a day count for this particular mixture. Do not assume that extra lime juice or chili extends safe storage time. The reviewed guidance supports prompt refrigeration and cold storage, not a longer shelf life based on seasoning. FoodSafety.gov produce-handling guidance
What if it has been left out?
USDA FSIS says to discard cold perishable food left at room temperature for more than two hours, or more than one hour when the temperature is above 90°F (32°C). Count time out of refrigeration, including serving time; lime juice does not change these limits. USDA FSIS leftovers guidance

Wash the pineapple before cutting
Rinse whole pineapple under running tap water before cutting. Do not use soap or household cleaning chemicals on produce. Lime juice is not a substitute: FoodSafety.gov says lime juice, along with salt, pepper, vinegar, and lemon juice, has not been shown effective at removing germs from produce.
