A paper bag can help them ripen faster, but harvest maturity matters more than any indoor trick: fruit picked too early may color and soften without developing the flavor of vine-ripened tomatoes.
Which green tomatoes are likely to ripen indoors?
Start with sound, full-sized fruit. Tomatoes that have begun to blush—the first change from green toward their ripe color—are the better choice when flavor matters. Cornell Cooperative Extension recommends picking at this first color change for the best flavor and keeping the fruit at room temperature. Mature-green tomatoes can also ripen after picking, but very small, immature fruit may not ripen normally.
If frost is approaching, harvest suitable fruit before it damages them. Handle tomatoes gently; set aside split or bruised fruit to use promptly rather than holding it with the ripening batch.
How to ripen tomatoes indoors
- Sort the harvest. Keep sound, full-sized fruit for ripening. Prioritize fruit that has started to change color.
- Choose a dark, comfortable room-temperature location. Arrange tomatoes in a single layer on a tray or in a box. Aim for roughly 68–70°F (20–21°C) as practical guidance, not a precision guarantee. UC Davis identifies 20°C (68°F) as the optimum temperature for sensory and nutritive quality; Cornell gives a household range of 70–75°F (21–24°C) for mature-green or later fruit in dark storage.
- Use a paper bag only if useful. For a small batch, place tomatoes in a paper bag, fold it closed loosely, and make a few holes. A box also works. These enclosures retain some naturally produced ethylene, a gas that tomatoes respond to and produce as they ripen. An open tray is fine if you prefer easy inspection.
- For a faster start, add ripe fruit. A ripe tomato or another ethylene-producing fruit in or near the bag can provide more ethylene. This may speed ripening; it does not make immature fruit mature or restore sugars lost by picking too early.
- Inspect the batch regularly. Check at least every day or every few days, depending on conditions. Remove ripe tomatoes for use, and discard fruit that becomes soft, wet, or moldy so decay does not affect the rest.
Tray, bag, or ripe fruit: which setup should you use?

These are options for managing convenience and speed, not different routes to better flavor. Harvest maturity and storage temperature have more bearing on the result.

How long does indoor ripening take?
There is no single reliable timetable because maturity and temperature vary. Illinois guidance says partially colored tomatoes may ripen in one to five days, depending on how under-ripe they are. Iowa State University Extension and Outreach estimated about two weeks for mature-green tomatoes held at 65–70°F (18–21°C) in its 2015 guidance. Treat these as estimates for different conditions, not a promise for every tomato; check the fruit regularly rather than waiting for a set date.

Do not rely on sunlight
Tomatoes do not need light to ripen. A sunny windowsill is not a shortcut; direct sun can heat fruit. A dark indoor place is suitable.

Do not refrigerate tomatoes that are still ripening
Cornell Cooperative Extension advises against refrigerating fruit intended to ripen for good flavor. Keep it at room temperature during the ripening process.
Set realistic expectations for picked fruit
Indoor-ripened tomatoes can develop color and soften, but that does not guarantee vine-ripened flavor. Iowa State cautions that tomatoes ripened indoors may be less flavorful than those ripened on the vine. Picking at the first color change gives flavor-focused harvests a better starting point; ethylene and warmth help ripening proceed but cannot compensate for fruit harvested too early.
