How does mercury get into fish?
Nearly all fish contain at least traces of methylmercury, but amounts vary substantially by species. Mercury enters aquatic environments and can be converted to methylmercury in water or sediment. Fish take it in through food; larger, longer-lived predatory fish tend to accumulate more.
Seafood is the most common U.S. dietary exposure route for methylmercury. The FDA identifies fetuses, infants, and children as especially vulnerable to potential effects during active brain development. The amount and duration of exposure matter. FDA/EPA guidance therefore combines fish type and eating frequency rather than recommending a universal seafood ban. FDA: Mercury in Food
Which fish should you choose?
Use the FDA/EPA chart, which groups fish and shellfish into “Best Choices,” “Good Choices,” and “Choices to Avoid.” Prefer a variety of Best Choices. A species missing from the chart is not necessarily low in mercury: the FDA says it may not have enough reliable data to include it.

The categories reflect species-specific mercury measurements and estimated consumption, compared with EPA’s reference dose. FDA/EPA’s technical explanation says the advice aims to reduce mercury exposure while allowing consumers to obtain fish’s health benefits. The agencies updated the advice in October 2021 to incorporate the 2020–2025 Dietary Guidelines for Americans. How much fish should you eat?
If you are or might become pregnant, or are breastfeeding
FDA/EPA advises 2 to 3 servings a week—about 8 to 12 ounces total—from a variety of Best Choices. A typical serving is 4 ounces before cooking, roughly the size and thickness of an adult palm. You may instead have one serving of a Good Choice in a week, but do not eat other fish that week.

For children ages 1–11
The general advice is two servings weekly from a variety of Best Choices, with portions adjusted for age. FDA/EPA examples are about 1 ounce for ages 1–3, 2 ounces for ages 4–7, 3 ounces for ages 8–10, and 4 ounces at age 11.

What about tuna?
Tuna type matters. Canned light tuna is a Best Choice and can be eaten 2 to 3 times weekly under the FDA/EPA advice. Albacore, also called “white” tuna, is a Good Choice: limit it to one serving that week and eat no other fish that week. Varying species is preferable to relying repeatedly on one fish.
Can cooking or cleaning fish reduce mercury?
No. The FDA/EPA consumer guidance states: “Mercury is found throughout the tissue in fish, so cleaning or cooking will not reduce the amount of mercury.” Washing, trimming, or cooking is not a way to lower mercury exposure; choose a lower-mercury species instead.

What if the fish is locally caught?
Before eating fish caught by you, family, or friends, check advisories for the specific lake, river, coastal area, or other waterbody. Local pollutant levels vary by place and species, and state or local advisories may address contaminants besides mercury.
FDA guidance about removing skin, fat, and organs from self-caught fish concerns other pollutants that can collect there. It should not be mistaken for a method of removing mercury. Follow the advisory for the water where the fish was caught.

Should you stop eating fish to avoid mercury?
For most people, no: the practical approach is to choose lower-mercury fish rather than eliminate seafood. FDA/EPA guidance is designed to balance reducing methylmercury exposure with the nutritional benefits of fish. The agencies report average weekly fish intake of 4.2 ounces among pregnant individuals and 7 ounces among breastfeeding individuals, compared with the recommended 8–12 ounces; the cited consumer page does not specify the underlying survey year.
