Collect food scraps in a small, lidded kitchen container, check your local program’s accepted-items and liner rules, then transfer scraps to the designated curbside cart and set it out as instructed. Keep scraps chilled or frozen if they need to wait, especially in warm weather. The details vary by city, so another program’s bag or food rules may not apply to yours.
1. Check what your local program accepts
Before you start, look up the accepted-material list for the service that collects your cart. Programs differ in what they accept and how their material is processed; do not assume that a food or packaging item allowed elsewhere is accepted locally.
For example, Austin’s residential curbside guide describes acceptance of meat, poultry, seafood, dairy, and bones in its commercial processing system. That is an Austin-specific example, not a guarantee for other programs. Austin Resource Recovery’s curbside composting guide
Check the exclusions as well as the accepted foods. Some programs also give instructions for liquids, fats, oils, and grease; Austin advises keeping these out of its organics cart. Follow your service’s own directions rather than relying on a general composting list.

2. Collect scraps in a small, lidded container
Use a small container with a lid that is easy to empty and clean. A dedicated countertop compost pail is convenient but not required: Los Angeles Sanitation also identifies reusable food-storage containers and coffee cans as options. Los Angeles Sanitation’s green-bin collection guidance
Keep the container somewhere practical for food preparation, and empty it regularly. If scraps will sit for a while or warm weather makes odors harder to manage, store the container in the refrigerator or freezer. Boston recommends refrigerator or freezer storage and putting scraps out on collection day; Cambridge also suggests chilling scraps during summer. 3. Check the liner rule before using a bag
Do not assume a bag is acceptable just because it says “compostable,” “biodegradable,” or “degradable.” Liner rules vary, and a bag that works in one city may contaminate another program’s load.
- Los Angeles: Keep plastic and compostable bags out of the green bin. Los Angeles Sanitation
- Boston: The city allows specified liner options, including double-lined paper and bags bearing listed certifications. Check the current guidance for the exact qualifying options. Boston Public Works
- Sydney: Use bags certified to AS 4736 if bagging scraps; the city also permits newspaper as an alternative. Plastic, degradable, and generic biodegradable bags are not accepted in its food-scraps bin. City of Sydney
If your program does not allow a liner, or you prefer not to use one, follow its approved alternatives. Boston’s double-lined paper and Sydney’s newspaper guidance are examples, not universal rules. Sydney also notes that excess liquid can make compostable bags break down faster, so drain liquid when its instructions call for it.

4. Transfer scraps and set out the cart correctly
- On the scheduled collection day, empty your kitchen container into the designated organics cart, following the local rules for bags and accepted contents.
- Close the cart and secure it as directed. Cambridge instructs residents to lock the cart and keep it shaded where possible.
- Place the cart out at the time and location specified by your service. Boston advises putting scraps out on collection day; Cambridge says to set its cart out with trash and recycling on collection day.
Follow your collector’s set-out and access instructions, since schedules and cart requirements are local. Boston warns that contaminated bins will not be collected. Boston Public Works
