For a reliable starting point, use 60 grams of coffee per liter of water, weigh both ingredients, and adjust one setting at a time. Then use the cup’s taste to guide small changes to grind size or ratio. There is no single grind setting or brew setting that suits every coffee and drip machine.

Start with a measured coffee-to-water ratio

The Specialty Coffee Association (SCA) gives 60 g of coffee per liter of water as a common drip and immersion brewing ratio. That is a water-to-coffee ratio of about 16.7:1 by mass: for every 1,000 g of water, use 60 g of coffee. Treat it as a baseline, not a rule about what you must like. SCA’s explanation of brewing ratio describes how ratios help brewers prepare and scale recipes consistently.

To scale the starting dose, multiply the water amount in liters by 60. For example, 0.5 L × 60 g/L gives 30 g of coffee. That half-liter amount is a calculation from the baseline ratio, not a separate SCA recommendation. A digital scale makes it easier to repeat the recipe than relying on scoops, whose weight varies with grind and how they are filled.

Make one controlled change at a time

For your first comparison, keep the coffee, water amount, dose, filter, and machine settings the same. If you change the grind and add more coffee at once, it becomes difficult to tell which change affected the cup. Record the recipe and what you notice, then alter one variable and brew again.

  1. Measure. Weigh coffee and water consistently, beginning with 60 g of coffee per liter of water.
  2. Hold the routine steady. Use the same coffee, filter, machine, and settings for the next brew.
  3. Adjust one input. Make a small grind change first, or change the ratio separately; avoid changing both together.
  4. Taste and note the result. Keep the change if you prefer the cup, and otherwise return to the previous recipe or test a different small adjustment.
  5. Explore machine options. Once you can repeat a baseline brew, try available strength, bloom, or temperature controls one at a time.

Adjust grind size without chasing a universal setting

Grind size affects how water extracts coffee. The SCA explains that finer grounds can raise both total dissolved solids (TDS)—a measure of concentration—and extraction yield. That does not establish one ideal grinder number for all beans, grinders, and drip makers. Use small changes and follow your brewer’s instructions rather than treating a dial number as universal. When the cup seems weak, first check that you measured the dose and water correctly. If those are consistent, test either a slightly different ratio or a small grind adjustment, changing only one at a time. A finer grind can affect extraction as well as perceived strength, so judge the result by taste rather than assuming that more concentration is automatically better.

Use taste as feedback, not a definitive diagnosis

The classic brewing chart relates TDS and extraction yield to sensory descriptions. In that simplified framework, low extraction is associated with sour or grassy notes, while higher extraction is associated with bitterness. These are useful clues for deciding what to test, not proof of a single cause: strength and extraction are different measures, and personal preferences do not always fit neatly into a chart.

The SCA reports that a brewing-chart project used 12 panelists, 30 flavor attributes, triplicate tasting, and more than 58,000 sensory descriptive data points. The scale of that work does not make its chart a complete account of how every person experiences coffee. Read the SCA’s explanation of the brewing control chart and its limits.

  • Weak: Verify the coffee and water measurements first. Then test a ratio change or grind change separately.
  • Sour or sharp: Treat it as a reason to investigate extraction, not as proof that the grind is too coarse or that one setting is wrong.
  • Bitter: Review whether a recent change affected extraction or strength. The chart’s association between higher extraction and bitterness is a clue, not a universal diagnosis.
  • Inconsistent from batch to batch: Weigh both ingredients, keep the routine steady, and write down each adjustment so you can reproduce a result you enjoy.

Temperature and machine settings: change them after the baseline

A hotter setting alone does not guarantee a better-tasting cup. In an SCA-described drip-brewing study, researchers compared water temperatures from 87°C to 93°C while adjusting grind, dose, and water pulsing to achieve similar TDS and extraction yield. The report says temperature alone had mostly insignificant flavor effects when those measures were similar. The study involved one medium-roast Honduras coffee; its finding does not show that temperature never matters or that every home brewer behaves the same way.

The study included 12 expert tasters and 118 consumer tasters, and reported 433 batches and 4,158 cups. Those figures describe that study, not a general consumer preference or a recipe guarantee. The SCA’s account of the temperature study gives its context and methods.

If your machine offers brew-strength, bloom, or temperature controls, first establish a repeatable recipe, then test each control separately. The best setting depends on the equipment, coffee, and cup you prefer; the evidence does not identify one optimal setting for all drip makers.

Basket shape and brewer choice

Flat-bottom and conical filter baskets can produce different flavor attributes under controlled conditions, with other variables held constant. That finding supports comparing brewers by the cup you prefer, not declaring one basket shape the winner. As the SCA article authors put it, “whatever brew method tastes the best to you is ‘best,’ and it’s up to each individual to decide.” Their comparison of flat-bottom and conical drip baskets describes the study.

If you are choosing a machine, compare practical features such as capacity, carafe type, single-serve capability, and available settings. SCA certification is another useful point of comparison: it indicates that a home brewer passed the association’s equipment certification process, but it cannot predict whether you will like its coffee. The SCA’s roster changes, so check its current certified home brewer listing for current models and status.

Keep the recipe repeatable

Better drip coffee is usually a process of finding a recipe you enjoy and being able to make it again. Begin with a measured ratio, keep the brewing routine stable, and use modest, isolated adjustments to learn what affects your cup. Water quality can also matter, but there is no one household filtration or mineral recipe established here for every location and brewer.
