In GTA V story mode, the general approach is to break police line of sight and stay out of sight while the search continues—but no method is guaranteed, and the options differ across GTA games and missions.
Lose the cops in GTA Online
Rockstar’s GTA Online starter tips describe two ways to deal with a wanted level. One requires physically evading pursuers; the other uses an in-game service.

Choose the tunnel route if you want to evade the police yourself. If you prefer the paid removal option, call Lester and check the current in-game prompt for availability and cost.
Lose a wanted level in GTA V story mode
The Xbox-hosted GTA V manual describes a wanted display from one to five stars, with the stars reflecting police interest. At five stars, the manual says the National Guard is called in. The response escalates as the wanted level rises, so breaking line of sight becomes harder.

For general story-mode guidance, get out of the police’s view and stay hidden while the search continues. A community-maintained GTA Wiki reference for GTA V describes hiding from police sight; the official manual establishes the star system, but does not give a hiding route, cooldown duration, or guaranteed escape method. Whether you can clear a wanted level may also depend on mission rules.
Why instructions vary between GTA games
“GTA” covers multiple games with different wanted-level systems. The tunnels and Lester advice above is specifically for GTA Online; the five-star scale cited here is documented in the GTA V manual. Secondary references describe different systems in GTA IV, which uses a search area, and San Andreas, where wanted stars can eventually decay. See the GTA IV wanted-level reference and San Andreas wanted-level reference for those entries; do not assume a tactic from one game applies unchanged to another.

For a specific mission, mode, or edition, use the options shown in that game. The cited sources do not establish a universal escape timer, star-by-star success rate, or hiding spot that always works.
