Keep perishable food at or below 40°F (4°C), and use a thermometer to verify the temperature rather than guessing how long your cooler will hold ice. Start with cold food and frozen or block-ice cold sources, limit how often you open the cooler, and switch to shelf-stable food when you cannot maintain safe cold storage.
What you need to know before choosing an ice quantity
There is no universal amount of ice—or reliable number of safe days—that applies to every cooler and trip. Heat, shade, how often the lid is opened, the temperature of food when packed, and the amount of cold source all affect the result. The useful decision rule is the food temperature: keep perishables at 40°F (4°C) or below and check it with a cooler or food thermometer. FoodSafety.gov’s guidance on the four steps to food safety identifies 40°F to 140°F (4°C to 60°C) as the danger zone.
A cooler’s size, price, or material alone does not establish how long its contents will stay safe. Treat temperature readings—not an advertised ice-retention estimate or a fixed ice-to-food ratio—as the basis for decisions.
Prepare the food and cold sources before departure
- Plan what you will eat and when. Pack later-trip foods first so the items you need earlier are easiest to reach.
- Chill or freeze food in advance. Refrigerate or freeze it overnight; pack food cold or frozen, not warm.
- Add enough cold sources to maintain 40°F (4°C) or below. USDA FSIS says a block of ice keeps food colder for longer than ice cubes. Frozen gel packs and frozen drinks are also options. Check temperatures during the trip instead of assuming any particular quantity will last for a set number of days. See USDA FSIS guidance for hiking, camping and boating.
- Use watertight containers. They help keep food from contacting meltwater and make it easier to keep raw foods separate.
Pack to prevent cross-contamination and excess access
Separate raw meat from ready-to-eat food
A dedicated cooler for raw meat or poultry is preferable. If everything must go in one cooler, put raw meat or poultry below ready-to-eat foods and contain it so juices cannot leak onto other food. Keep food protected from meltwater as well.

Keep the perishable-food cooler closed
On a long trip, a separate cooler for drinks and frequently accessed snacks can reduce openings of the cooler holding perishables. At the roadside or campsite, take out what you need promptly and close the lid again.
Keep the cooler cold during the trip
- Keep it in the shade whenever possible.
- Limit lid openings and avoid leaving it open while sorting through food.
- Add insulation with a blanket, tarp, or poncho, as USDA FSIS suggests.
- Use a thermometer to check the cooler or food; aim for 40°F (4°C) or below.
Road-trip advice from FoodSafety.gov likewise recommends enough ice or freezer packs to hold food at or below 40°F, packing cold food, using a cooler thermometer, separating raw meat, and considering separate coolers for long trips.

Choose a cooler that fits the trip, not an assumed number of days
USDA FSIS describes foam coolers as lightweight and low cost, with good cold retention, but fragile. Plastic, fiberglass, and steel coolers are more durable and can withstand outdoor use; large models may weigh 30 or 40 pounds when filled. These are broad material trade-offs, not a guarantee that one type will keep food safe longer in your conditions.
For car camping, a cooler is practical when you can keep it shaded, limit access, and replenish cold sources as needed. For backpacking or another trip where carrying and replenishing cold storage is difficult, USDA recommends cold food for the first day and shelf-stable food for later days. Examples include prepackaged shelf-stable meals, dehydrated foods, nuts, dried fruit, jerky, and canned foods.

What to do if food warms up
Perishable food should not be above 40°F (4°C) for more than two hours, or more than one hour when the surrounding temperature is above 90°F (32°C), according to FoodSafety.gov’s food-safety guidance. Do not use smell or taste to decide whether food is safe. USDA FSIS advises that cooler leftovers are safe only if ice remains in the cooler; if it is gone, discard them.
If you cannot tell that food stayed cold enough, do not treat the cooler’s age, appearance, or remaining chill as proof of safety. Plan shelf-stable meals for days when cold storage cannot be reliably maintained.
