To keep cut fruit and vegetables safe and appealing for school meals, wash whole produce under running water before cutting, prevent contamination with clean hands and sanitized equipment, then cover and keep cut portions at 41°F or below. Keep them cold during delivery and service, monitor temperatures under the school’s procedures, and discard leftovers within the time limits that apply to the service setting and local food-safety rules.

Wash produce before cutting

Wash whole fruits and vegetables under running water just before preparation—not before putting them into storage. Do not soak produce or leave it in standing water. Follow USDA guidance for any approved chemical disinfectant, including its label instructions.

  • Do not rewash packages labeled ready-to-eat, washed, or triple-washed.
  • Reject produce with visible decay or damage; this is especially important for melons and leafy greens.
  • For melons, wash the intact rind under cool running tap water and scrub it with a clean produce brush before cutting. This helps keep contamination on the rind from being transferred to the flesh by the knife.
  • For tomatoes, USDA school guidance calls for wash water at least 10°F warmer than the tomato’s internal temperature.

Prevent contamination during preparation

Wash hands before handling produce and again after any contamination risk. Clean, rinse, sanitize, and air-dry food-contact surfaces and equipment according to the school’s procedures. Use clean gloves, deli paper, or utensils as a barrier when handling ready-to-eat portions; these barriers do not replace handwashing.

Cutting exposes moist interior surfaces where microorganisms already present can multiply. For that reason, freshness depends on safe handling and temperature control as well as on how recently the produce was cut.

Cover and keep cut produce cold

Place cut portions promptly in covered, food-safe containers and hold them at 41°F or below. USDA classroom guidance recommends checking and recording temperatures when produce is delivered to the classroom. A digital food thermometer can support that monitoring; use and sanitize it according to the district’s procedure.

Keep containers refrigerated until service. During transport or service, use a refrigerated cart, ice, or ice packs as needed to maintain the required temperature. USDA’s school guidance says cold self-service items should be held at or below 41°F and monitored every 30 minutes.

Apply the time limits for the service setting

USDA guidance describes different limits for different school service situations. Do not treat them as one universal allowance for all cut produce:

Situation USDA guidance What to do
School display without refrigeration or containers surrounded by ice Cut produce may be displayed for up to four hours. Discard uneaten produce at the end of that period.
Classroom service at room temperature Do not serve cut produce held at room temperature for more than two hours, or held above 90°F for more than one hour. Follow the classroom guidance, district food-safety plan, and local requirements.
Refrigerated cold self-service Hold at or below 41°F; USDA school guidance says to monitor every 30 minutes. Maintain and check the cold holding temperature during service.

USDA also says cut melons held at 41°F or above must be discarded after four hours. That guidance is specific to cut melons and should not be substituted for the separate classroom limits or local rules. The FDA Food Code 2022 identifies cut melons, leafy greens, and tomatoes as foods requiring time/temperature control at 41°F or below. Requirements depend on the Food Code version adopted by the relevant state or local jurisdiction, so use the applicable code and district procedures.

Store prepared produce with dates

Cover refrigerated cut produce, follow any manufacturer’s storage instructions, and use an in-house policy that marks when produce was prepared or when it must be used. USDA guidance sets a seven-day consume-or-discard period for refrigerated cut melons and cut tomatoes. This is a maximum stated in that guidance, not a reason to keep produce that has been mishandled or shows spoilage.

Melons

Reject visibly damaged or decayed melons, wash and scrub the rind before cutting, and refrigerate cut portions. Consume or discard refrigerated cut melon within seven days under USDA guidance; during school service, also apply the relevant cold-holding and display limits.

Tomatoes

Wash tomatoes using water at least 10°F warmer than their internal temperature, then refrigerate cut portions at 41°F or below. USDA school guidance says to reject fresh-cut tomatoes delivered above 41°F and gives a seven-day refrigerated consume-or-discard period for cut tomatoes.

Leafy greens

Do not use visibly decayed or damaged greens. Do not rewash packaged greens labeled ready-to-eat, washed, or triple-washed.

Plan delivery and leftovers

  1. Prepare single-serve portions in closed or covered containers when practical.
  2. Keep portions cold after preparation and deliver them shortly before service.
  3. Use ice, ice packs, or a mobile refrigerated cart when needed to maintain cold holding during delivery and service.
  4. Check and record temperatures according to the school’s monitoring procedure.
  5. Collect and discard classroom leftovers after service; do not return them to storage for later meals.

Choose and receive fresh-cut produce carefully

USDA defines fresh-cut produce as produce that has been cleaned, peeled, sliced, chopped, shredded, cored, or trimmed, but not cooked or frozen. Because processing exposes moist surfaces, school buyers should review suppliers’ practices for receiving, storage, processing, sanitation, staff training and hygiene, and recall traceability. For delivered fresh-cut tomatoes, USDA school guidance specifically says to reject product received above 41°F.

When a temperature standard is not met, follow the district food-safety plan and the local or state code adopted for the school. The FDA Food Code 2022 is a model code; its provisions do not by themselves establish which version or requirements apply in every jurisdiction.
